Gram flour or Besan– can use thick or thin any type of besan for this recipe.
Ghee– I have used desi ghee that imparts a very nice aroma to these modaks. For making it vegan can use coconut oil.
Milk– Toned milk is used here. It gives a soft grainy texture to modaks. You can also use full fat for a richer taste. For vegan use coconut milk or almond milk.
Sweetener– Khand sugar is used which is a healthy alternative and rich in minerals. Also gives a caramel-like taste. You can also replace it with jaggery, coconut sugar or palm sugar if you want.
Milk powder– provides a khoa-like taste in the modak.
Dry fruits– I have used cashews, almonds and watermelon seeds. You can use any nuts or seeds according to your choice.
