Refreshing saffron almond milk recipe is made with badam paste that is boiled with milk in addition of little saffron and cardamom that makes it very flavourful and aromatic.

Almond kesar milk is considered to be a traditional ayurvedic secret for increasing immunity and strong bones from the old time.

Basant Panchmi is a festival of welcoming the “king of all seasons” Spring. This time is the best time of the year with lots of sunshine and green all around. It is celebrated all across the country with different customs and traditions.

How to Prepare Badam Kesar Milk at Home from Scratch

Here, I am sharing the traditional way of making this delicious almond Kesar milk at home to dedicate it to Goddess Saraswathi on this auspicious day of Basant Panchmi.

Firstly, wash and soak few almonds. After soaking, peel them off and then make a very thin paste with the help of a pestle and mortar adding a little milk in it. You can also use a mixer grinder for the same if a pestle mortar is not handy but this method gives a nice texture to the milk.

The badam paste is then added to the boiled milk and simmer for few minutes and followed by adding saffron milk, cardamom, and jaggery powder(shakkar). We have used jaggery instead of refined sugar which also enhances its taste and nutrition value. Healthy and delicious this saffron almond milk is ready to serve in no time. It tastes best when served hot but can also be chilled and serve according to your preference.

We can buy readymade flavored milk or milk powder from the store for our convenience but homemade kesar almond milk gives you the freedom to control the consistency, flavor, and sugar quantity in the recipe according to your taste. Lastly, it is free from any types of chemicals and preservatives that are harmful to our body.

Step by Step Preparation of Saffron Almond Milk Recipe with Pictures

1. Firstly, wash and then soak almonds in the water for at least 7-8 hours. After soaking, peel the almonds and put them aside.

2. Grind 2-3 cardamom in the pestle mortar and keep aside. 

3. Now add few almonds at a time in the pestle and grind them with the help of mortar, add a little milk in between that makes the grinding easy and fast. Then add some more almonds and grind, repeat this process till all the almonds are ground and become a paste-like consistency. 

4. Make the almond paste consistency as thin as possible that helps in giving a smooth and creamy texture to the milk.

5. Now start heating milk in a saucepan, wait till it starts boiling. Take some hot milk in a bowl and add few saffron strands to it. Keep aside.

6. After that add the almond paste and cardamom powder to the boiled milk and mix. Simmer it for 5-7 minutes, stirring occasionally.

7. Then add Kesar soaked milk and jaggery powder, mix, and further cook for 2-3 minutes.

8. After that, switch off the heat, transfer the hot badam milk to the serving cup, decorate with a pinch of cardamom and few Kesar strands and serve hot.

  • Almonds should be soaked for at least 7-8 hours. Longer soaking helps in giving a creamier texture to the milk but if you are in a hurry soak them in hot water for about half an hour and grind.
  • I have used toned milk to reduce the calories but you can also choose full-fat milk to make it more rich and creamy.
  • In this recipe, I have added 9 almonds per cup but this quantity can be decreased or increased according to your taste and preference.
  • Once the badam paste is added to the boiled milk, stir the milk occasionally to avoid sticking at the bottom.
  • Cardamom is used for enhancing the flavor but can also be skipped if do not like it.
  • Jaggery is a healthy alternative to white sugar can also choose other healthy alternatives like honey, khandsari sugar, date sugar, coconut sugar, etc according to your preference.
  • If you are like it to serve chilled, add rose or kewra water to make it more flavourful.
  • Make this milk in large quantity and store in the refrigerator for up to 2-3 days for later use.
