We can make ice cream base at home in different ways as with or without milk or with dairy-free options according to our needs. After preparing the base, we have to add flavours and heavy cream or non-dairy cream according to our requirement to give the ice cream a creamy and smooth mouth feel texture.

Step by Step Preparation of Homemade Simple Kesar and Chocolate Flavoured Ice Cream Made with Lauki Rabdi
How to make lauki ice cream base or lauki rabdi
1.Wash, peel and chopped lauki or bottle gourd. Transfer it to a grinder and grind it into smooth paste without adding any water.
2. Now transfer it into a sauce pan add milk (keep 3-4 tbsp separate) and put it on a low medium flame.
3. Cook it for 3-4 minutes till the raw smell of lauki is gone.
4.Now add 5 tbsp milk powder in the rest of the milk, mix it well to form a paste and put aside.
5. After 3-4 minutes of cooking, add khandsari sugar, cardamom powder and milk powder mixture to the lauki mixture and stir it continuously till there is no lumps left.
6. Cook it for another 2-3 minutes till it starts little thicken. Now switch off the flame and let it cool completely.
7. Once cool down transfer to bowl and put it in the freezer for 1-2 hours.
8.After 1-2 hours, whip the non dairy cream till it start forming stiff peaks.
9.Add lauki cooled lauki mixture in it and beat it for 1-2 minutes.
10.The ice cream base is ready. Now divide it in to two parts.
Steps of making Kesar ice cream
- In a mixing bowl add whipped cream and lauki rabdi mixture. Add kesar essence and yellow food colour. Beat again for few seconds till they mix well.
2. Add chopped pista and almonds and fold gently.
3. Transfer to a freezer safe box, level it and sprinkle some chopped almonds and pista on the top.
4. Cover it with a plastic wrap touching the surface of ice cream and close the lid.
5. Put the ice cream in the freezer for at least 8-10 hours to set.
Steps of making Chocolate ice cream
1.In a mixing bowl add rest of the ice cream base (whipped cream and lauki rabdi mixture). Add chocolate essence and cocoa powder.Beat again for few seconds till they mix well.
2. Add some dark chocolate chips and fold gently.
3.Transfer to a freezer safe box, level it and sprinkle some choco chips.
4. Cover it with a plastic wrap touching the surface of ice cream and close the lid.

Ice cream base with lauki
- 1 lauki 300 gm
- 250 ml milk
- 5 tbsp milk powder
- ½ cup khandsari sugar
- 1 tsp cardamom powder
- 500 ml non dairy whipping cream
Kesar icecream
- ½ of the ice cream base
- 2 drops yellow colour
- 2-3 drops kesar essence
- 2 tbsp chopped almonds
- 2 tbsp chopped pista
Chocolate ice cream
- ½ of the ice cream base
- 2-3 drops chocolate essence
- 2 tbsp unsweetened cocoa powder
- 3-4 tbsp dark chocolate chips
Instructions
Steps of making lauki rabdi ice cream base

- The ice cream base with lauki is ready. Now divide it in to two parts.
Steps of making kesar flavoured ice cream
- In half of the ice cream base add kesar essence and yellow food colour. Beat again for few seconds till they mix well.
- Add chopped pista and almonds and fold gently.
- Transfer to a freezer safe box, level it and sprinkle some chopped almonds and pista.
- Cover it with a plastic wrap touching the surface of ice cream and close the lid.
- Put the ice cream in the freezer for at least 8-10 hours to set.

- In another half part of the ice cream base (whipped cream and lauki rabdi mixture). Add chocolate essence and cocoa powder.Beat again for few seconds till they mix well.
- Add some dark chocolate chips and fold gently.
- Transfer to a freezer safe box, level it and sprinkle some choco chips.
- Cover it with a plastic wrap touching the surface of ice cream and close the lid.
- Put the ice cream in the freezer for at least 8-10 hours to set.
