Ingredients used in the making of vegetable poha
Poha (flattened rice)- I have used white coloured thick poha for this recipe. Thin poha is not a good choice for this dish as it becomes clumsy after absorbing water and does not taste good. You can also try with red rice poha or black rice poha if you want.
Fresh veggies – I used onion, carrot, potato and tomato. Finely chop the vegetables as they cook fast and easily blend with poha. You can also add beans, green capsicum, peas as per your taste.
Green chillies– Gives a spicy taste and flavour.
Curry leaves– Provides a unique aroma to the poha dish and is good for digestion.
Peanuts – Roasted peanuts give a crunchiness and add protein content to the dish.
Besan bhujia (optional) – gives a crunchy and spicy texture to the poha dish.
Health benefits of poha
- Poha is also known as flattened rice or beaten rice. It is a wholesome meal that contains a good amount of carbohydrates, rich in iron and fibre.
- It is gluten-free in nature and also a good source of antioxidants, essential vitamins and minerals.
- Poha is a good source of fibre that helps in controlling blood sugar and managing diabetes.
- It also has probiotic effects as it is made from parboiled paddy and fermenting process.
Step by step preparation of Healthy Mix veg poha
1. Firstly, transfer poha in a sieve and wash it with water, strain extra water and leave aside for 15-20 minutes.
2. Then take raw peanuts and add 1 tsp oil, roast them till they become crispy.
3. Now finely chop onion, carrot, potato and tomato. Keep them aside.
4. Heat oil in a frying pan, add mustard seed. Once they crackle, add heeng.
5. Now add chopped onion and sauté them. Add 1 tsp sugar and cook it till the onion become light brown in colour. Add curry leaves and sauté them for few seconds.
6. Add salt, turmeric powder, chopped carrots and potatoes. Cover the pan and cook them for 2-3 minutes. Add roasted peanuts and mix.
7. Finally, add poha and mix gently well with other ingredients.
8. Transfer into a serving bowl, garnish with chopped tomato and besan bhujia(optional). Enjoy with green chutney or coconut chutney.
Serving suggestion
It is best to serve as a wholesome breakfast with a cup of hot tea and green chutney or coconut chutney. Mix veg poha is a good choice for packed lunch and snacks for kids in the evening time.

Tips and tricks
- Wash and strain water immediately otherwise they become soggy.
- Leave poha for few minutes to dry out after washing. It will help in making poha crispy and keep the grains separated even after cooking.
- You can add any vegetables according to your taste.
- Add sprouts to make it richer in protein.
