What is chocolate
Chocolate is one of the most favourite sweet treats in the world. Chocolate is made from roasted and grounded cacao beans and then adding cocoa butter and sugar to it. It comes in 3 forms. Dark, Milk or White chocolate depends upon the amount of cocoa present in them.
Dark chocolate has the maximum amount of cocoa content, while white chocolate does not contain cocoa but only cocoa butter.
Switzerland is famous for its chocolates. Chocolate manufacturing is one of the biggest sources of their income.
Chocolates are sweet in taste and come in many different flavours and are everyone’s favourite. We can also make chocolates easily at home with using ready to use chocolate slabs and adding our favourite flavours to them. Then set them in different attractive shapes. And you are all set to enjoy the self-made chocolates.

How to make flavoured chocolate at home
Chocolate can be made from scratch at home or with a shortcut method where we use a ready-made chocolate slab and flavour it.
Here, I am sharing with you the shortcut method that is very quick and easy. Because for making chocolate from scratch, all the ingredients are not easily available in the market.
I have used a white chocolate slab of Morde brand (CH W-35) that is made of milk solids, sugar and fat content. We have used essence and colours to give flavour and colour to the chocolate. The essence and colour used here is artificially flavoured and oil-based. And different from that we use in the cake making.

First, we need to melt the chocolate either by microwave method or double boiler method.
Microwave method:
Cut the chocolate into small equal pieces, transfer it to a microwave-safe bowl and microwave it in a series of 20 seconds at a time till it melts completely. Then we add the flavour to it and let it cool to room temperature. Once it cools down, pour to chocolate mold and wait till they set.
Double boiler method:
If someone does not have a microwave available, they can use this method. Here we fill half of a saucepan with water and bring the water to boil. Once it starts boiling, you can put a bowl big enough to cover the mouth of that pan. So that water vapours did not leak and enter into the chocolate.
Add chocolate pieces in it and stir it gently till it melts. Now take off the bowl from the double boiler add the flavour and colour of your choice. Mix it well and cool it till the chocolate come to room temperature. Now pour the chocolate into the molds and let them set in the freezer for 5-10 minutes. Remove the chocolates from the mold.
How to store Homemade Chocolate
In summers you should keep them refrigerated till use. but in winters they stay good at room temperature in an airtight container.
Ingredients required for Homemade Flavoured Chocolate
White chocolate – is the base for chocolate making. I have used a white chocolate slab of the Morde brand. You can find it easily at any cake making and decorating material shop.
Dry cherries and nuts – to fill inside the chocolate. Give chocolates a crunchy and nutty taste.
Rose and mango essence – provide flavour to the chocolate.
Chopped pista – for making rose pista flavoured chocolate.
Step by step preparation of homemade flavoured chocolate
1. First, chop chocolate in small equal size. In summers, as the chocolate becomes soft due to heat, it is easy to cut. But in winter it is a little hard. Use a knife and chopping board to cut the chocolate.
2. Then transfer the chocolate to a microwave-safe bowl. Microwave it for 20 seconds at a time till it melts.
3. Temper the chocolate nicely till it becomes smooth and come to room temperature.
4. Now, divide the chocolate into two parts. Chop all the dry fruits and keep them aside.
Mango flavoured chocolate with a chocolate mold
- In one half, add mango flavour and yellow colour and keep aside.
2. Take a bowl, add chopped cranberry and brazil nuts. Mix and keep them aside. Now fill mango flavour chocolate into a pastry bag.
3. Take a chocolate mold, fill ¼ of 4-5 molds. After that, add chopped cranberry and brazil nuts mixture. Now fill the mold with the chocolate. Tap them a few times so that the air bubbles released. Keep them in the freezer for at least 10 minutes. After that, take them out, de-mold them and keep them in the refrigerator till needed.
Rose Pista flavoured chocolate without chocolate mold
- In the second half of chocolate, add rose essence and green colour, mix well and put it aside.
2. Place a butter paper on a hard surface and pour the chocolate mixture over it. Spread evenly into a thick layer. Sprinkle chopped pista over it. Tap it for few times. Now put this butter paper in the freezer for 5 minutes.
3.Take it out from the freezer. Now with the help of different shaped cookie cutters, cut them into desired shapes. Store them in the refrigerator. Enjoy your homemade flavoured chocolates.

Tips and tricks
- You can choose nuts, seeds, dried fruits, or flavour of your chocolate according to your taste.
- While melting in microwave, heat for few seconds and then repeat till it melts. Heating for a long time in one go will burn the chocolate.
- Chill the chocolate in the freezer until they set. Don’t leave them for a long time. Otherwise, they become sticky.
- Store homemade chocolates in an airtight container and place them in the refrigerator.
