Personal Pizza With Paneer And Corn / Overnight Pizza Dough Recipe – Homemade Personal pizza with overnight dough crust is similar to Pizza hut’s pan pizza. But nutrition-wise, it is much healthier. The dough of the pizza base is made with whole wheat flour and kept overnight which makes it more flavourful. Add your favourite topping and enjoy the healthiest and tasty pizza at home.

What is pizza

A very famous savoury dish from Italian cuisine, consisting of a flat round base of bread dough baked with a topping of mainly tomatoes and cheese, typically with other toppings like meat, fish, or vegetables.

The word “pizza” came from the Latin word pinsa means flatbread. Bread dough, tomato sauce and cheese are the must-have ingredients in the making of a pizza.

About homemade personal pizza with paneer and corn

Traditionally, all-purpose flour, high fat and sodium content is the main part of the pizza that is not good for health. Here, in this homemade personal pizza, we used nutritious whole wheat flour for the pizza base and minimum fat and salt is used. Added lots of vegetables as the topping and made it a healthy and wholesome meal perfect for a lunch or dinner menu.

The steps of making the pizza dough are the same as we make a big size pizza. For personal pizza, we divide the dough into parts and separately bake them in a greased small pizza pan which is meant for the individual servings. I have used here four 6-inch pizza pans and made four personal pizzas out of the dough.

How to use instant dry yeast

I have used instant dry yeast for the pizza base that requires no proofing but, on the safer side, I always proof my instant yeast before adding to the flour mixture. It makes sure that yeast is good to use. But if you are using active dry yeast, it has to be proofed before adding in the dry mixture.

Topping for personal pizza

For the topping, I used green pepper, onion, paneer, and sweet corn but you can also add other vegetables according to your preference.
Mainly mozzarella cheese is used in pizza-making that why it is known as pizza cheese. But here, I used a blend of mozzarella and cheddar cheese which gives a better taste and flavour to the pizza.

The thickness of the pizza base is something you can decide. I like a medium-thick pizza base. It gives a more taste of topping than only the bread base. please check my other baked recipes with whole grains

How to make an overnight pizza base dough?

For making overnight pizza dough, we need a very less quantity of dry yeast. Mix all the ingredients, add water gradually and make a soft sticky dough. Knead it for few minutes, then put it in a greased bowl. Wrap it with cling film and refrigerate for 7-8 hours or overnight. The next day, when you are ready to bake, take out the dough from the refrigerator at least 2 hours before in winters and 1:30 hours in summers to bring it to room temperature and get proofed well.

How we can make personal pizza without a small pizza pan?

You can make personal size pizza even without having a single-serving pizza pan. Take a big rectangle cookie sheet, place your pizza bases on it, leaving some space between them and then bake.

Step by step preparation of Personal Pan Pizza With Paneer And Corn

Making of dough

1. In a bowl, add instant dry yeast, sugar and ¼ cup lukewarm water, mix. Cover it and leave it for 10 minutes.

2. Now in a big mixing bowl, add flour, semolina, salt and the rest of the sugar. Add yeast mixture and water gradually to make a soft and sticky dough.

3. Leave it for 15 minutes. After that, take out the dough on a clean surface and knead it for about 5 minutes. Then add room temperature butter, mix and knead again for 7-8 minutes till the dough become smooth and non-sticky.

4. Grease the bowl with oil. Place the dough in it and wrap it with plastic wrap. Put the bowl in the refrigerator overnight.

5. The next day, take this bowl out at least 2 hours before you start making pizza.

6. Let it sit on the kitchen counter and risen the dough. Then punch down the dough and knead for few seconds.

Baking of personal pizza

7. Meanwhile, preheat the oven at 220 degrees Celsius for at least 12-15 minutes with both the rods on.

8. Divide the dough into four pieces, make a smooth round of them. Take one ball and roll it into a 6-inch circle and place it on a greased pan. Do the same with other balls.

9. Now, bake these pizza base in the oven at 220 degrees Celsius for 2-3 minutes. Take them out from the oven and let them cool a little bit.

10. In a bowl, mix pizza sauce and tomato sauce and put aside.

11. Now spread this sauce mixture on the cooled pizza base and then top with mozzarella, onion, green capsicum, paneer and sweet corn. Sprinkle red chilli powder, black pepper powder, and oregano.

12. Bake them @ 220 degrees Celsius for about 15-20 minutes until the crust becomes crisp and the cheese becomes brown from the sides.

13. Take them out and let them cool for about 5 minutes. Then cut into the desired shape and serve warm.

  • You can also prebake the pizza bases and store them in the freezer for up to months or refrigerate them for 3-4 days.
