To make mango chia pudding first, soak chia seeds in curd for about 1-2 hours or even overnight. The mixture should be refrigerated. Chia seeds do not have any taste of their own. So, we can add any fruit and flavour to it and it took the flavour of them. It swells up after absorbing the liquid from the curd and become a thick consistency mixture. Now it is ready to use.

Curd – low-fat curd is used to cut the calories. curd is light on the stomach and gives a cooling effect also act as a great probiotic. People with lactose intolerance can also drink curd. Curd can be replaced with coconut milk, soy milk or regular milk if you want.

Mango – Ripe sweet mango is a good choice for this recipe. I choose mango as it is the season of mangoes and it is a favourite of almost everyone. But you can also add other fruits like banana, berries, kiwi, strawberries, avocado, pineapple etc according to your preference.

Honey – I have used honey to sweeten the chia curd mixture slightly. you can either skip totally or can try other healthy sugar alternatives like coconut sugar, maple syrup, palm sugar extra.

Coconut powder and nuts– Gives a crunch to the pudding and increase its nutritional value.

It is easy to make dessert with minimal ingredients ready in just 5 minutes. Mango chia pudding is perfect for satisfying your sweet craving can be served at breakfast with granola, at evening snack with cookies or as an after-meal summer dessert. It is a good sweet option for weight watchers too.

To make it vegan use any plant-based milk like coconut milk, soy milk, nuts milk or even dairy-free curd is the best option. Also, replace honey with maple syrup or coconut sugar.

Step by step preparation of Chia Pudding With Mango

1. Take a bowl, add curd. Whisk, to make it smooth. Now add chia seeds, mix well. Cover the bowl and refrigerate it for 1-2 hours.

2. Transfer mango pulp in a grinder and make a smooth puree. Transfer it to a bowl and keep it aside. Chop nuts and put them aside.

3. Take out the curd and chia seeds mixture from the refrigerator. Chia seeds absorb the water from the curd and swell.

4. Now take the serving glass, first pour 2 tbsp of curd and chia seeds mixture then 2 tbsp of mango puree. Again curd mixture and then finally mango layer.

5. Top with some coconut powder. Then garnish with some nuts and dried cranberry and serve immediately.ENJOY!
