Ready in 10 minutes, no need of any cooking, it is very easy to prepare amaranth seeds pudding with curd. It is also a diabetic-friendly recipe rich in fibre and minerals best served at breakfast or snacks time.

Amaranth is also known as Rajgira, cholai or Ramdana. It is in the form of fine seeds and is used extensively during religious festivals for fasting. We can pop these seeds and eat them. Ramdana flour is used widely in lots of recipes that call for gluten-free and making pasta or in baking.

Rajgira is a good option for a healthy, gluten-free breakfast. It gives you a feeling of fullness for a longer time and digests easily. This recipe is perfect for weight watchers and health-conscious persons.

Puffed or popped amaranth seeds– I have used homemade freshly popped amaranth seeds for this recipe. The popping of amaranth seeds at home is an easy process. To know how to pop amaranth seeds, you can check my video on how to pop amaranth seeds at home. Nowadays, readymade popped or puffed amaranth seeds are easily available in the market. You can also buy from there.

Curd – I have used homemade low-fat curd made with toned milk. It has all the essential nutrients as well as lower in calories, a good option for a healthy meal.

Honey– To provide mild sweetness, a very small quantity of honey is used. You can also try other healthy alternatives like jaggery powder, date sugar, coconut sugar or artificial sweetener instead of honey.

Fresh Fruits– Any seasonal fruit of your choice can be added to this recipe like strawberry, blueberry, raspberry, banana, chikoo, fresh fig, pineapple, pomegranate, pear. You can also use mixed fruits. I have added thin slices of apple to it.

Nuts and seeds – increase the nutrient value and gives a crunch to the recipe. Walnuts, pumpkin seeds and almonds are used. You can also try other dry fruits like watermelon seeds, dry figs, cashews, pine nuts, raisins, pecan, etc.

Flaxseeds powder– rich in omega-3 content gives a nutty flavour to the recipe.

Step by step preparation of No cook Amaranth seeds pudding with curd

1. In a mixing bowl, add fresh low fat homemade curd. Then Add puffed amaranth seeds. Mix gently.

2. Add honey and mix well again.

3. Now garnish with thin slices of apple, flaxseeds powder, pumpkin seeds, walnuts and almonds.

4. Serve immediately.

Tips and tricks

  1. Use fresh and chilled curd for a good taste.
  2. If using freshly puffed amaranth seeds, wait until they reach to room temperature and then add to the curd. 
  3. I have added honey as a sweetner, you can also replace it with raw sugar, brown-sugar,coconut sugar or any artificial sweetner of your choice. 
  4. Increase the quantity of the honey or sugar according to your taste buds. You can also skip sugar at all. It tastes perfect even without any sweetener.

  • 300 ml fresh curd made with toned milk
  • 1 cup puffed amaranth seeds (20 gm)
  • 1 tbsp honey
  • 1 small sized apple (150 gm)
  • 2 tbsp flaxseeds powder
  • 1 tbsp almonds chopped
  • 1 tbsp walnuts chopped
  • 2 tbsp pumpkin seeds

Instructions
 

  • In a mixing bowl, add fresh low fat homemade curd. Then Add puffed amaranth seeds. Mix gently.
  • Add honey and mix well again.
  • Now garnish with thin slices of apple, flaxseeds powder, pumpkin seeds, walnuts and almonds.
