Few things that you keep in mind while making these cookies. Use room temperature soft butter. Beat nicely with sugar till all the sugar dissolves and changes into a light fluffy mixture.

The dough should be a little sticky. If it is very soft, put it in the refrigerator for half an hour before scoop out on the cookie sheet. Bake in the preheated oven helps in giving a nice texture and spread to the cookies.

For crispier cookies, lower the oven temperature a little bit and bake them for a little more time.

The quantity of sugar used is less than regular cookies you can increase it according to your taste but keep in mind that always use sugar in moderation.

Butter – used unsalted fresh homemade butter. Butter gives a light texture and buttery taste to these cookies. If you want to reduce saturated fat, reduce the butter quantity to half and add half oil.

Khansari sugar– instead of refined white sugar desi Khand is used which is high in minerals and a healthier option.

Oats powder– ground quick oats into a coarse powder and add to the mixture. They provide a crispy texture to the cookies.

Coconut powder– dry coconut powder gives a chewy texture and a nice flavour to the cookies.

Custard powder– add a little crisp and helps in binding.

Rising agent– both baking powder and baking soda are used to give a nice lift to the cookies.

Eggless Oats Coconut Cookies (Refined Sugar Free)

Step by step preparation of coconut oats cookies

  1. Preheat oven at 170 Degrees Celsius for 13-15 minutes.

2. First, ground quick oats into powder and keep aside. Add 2 tbsp milk into coconut powder, mix and keep it aside.

3. In a bowl add soft butter and beat it for 1-2 minutes. Now add khand sugar and beat them till sugar melts and the mixture becomes light and fluffy.

4. Add vanilla essence and mix well for few seconds. Then add baking powder and baking soda and mix well with the mixture for few seconds.

5. Now add oats powder, coconut mixture, custard powder and mix with spatula to for a soft & sticky dough.

6. Place the dough in the refrigerator or 15-30 minutes.

7. Now with the help of a measuring spoon make small balls out of the dough and place on a baking tray lined with parchment paper.

8. Bake the cookies for 15-17 minutes in the preheated oven. Once done, take them out from the oven and let them cool completely on a cooling rack.

9. Store them in an air tight container. They stays good for up to 10-15 days
