Step-by-Step Instructions for making besan katli
1.Heat a heavy-bottomed pan on low to medium heat and add the ghee to it. Allow the ghee to melt completely.
2. Add the besan (gram flour) to the melted ghee and stir continuously to avoid lumps. Roast the besan in ghee until it turns fragrant and changes color. This should take approximately 10-12 minutes. Be patient and stir continuously to prevent burning. The besan should become a light golden brown and have a nutty aroma.
3. Take off the pan from the flame and let it cool slightly.
4. In a separate pan, combine desi khand and water. Heat it on low heat, stirring until the sugar dissolves completely.
5. Once the besan is roasted and the sugar syrup is ready, pour the sugar syrup into the roasted besan. Be careful as it may sizzle a bit. Also add cardamom powder along this.
6. Mix well to combine the besan and sugar syrup, ensuring there are no lumps. Continue cooking and stirring until the mixture thickens and leaves the sides of the pan.
7. Allow the mixture to cool for 5-7 minutes.
8. Transfer the mixture on a parchment paper and fold it many times till it becomes non sticky and smooth. This step is very important to make soft besan katli.

10. Decorate it with silver leaf and cut into desired shape. Allow the besan katli to cool and set for a few hours at room temperature.
