Step by step Instructions of making urad dal barfi at home
1. Take the urad dal in a fine mesh strainer or a bowl. Rinse it thoroughly under running water to remove any dirt or impurities.
2. After washing, drain the excess water completely. Spread the washed urad dal on a clean kitchen towel or paper towel to dry for about 1-2 hours. Ensure it’s dry before proceeding.
3. Heat a saucepan or a heavy-bottomed skillet over medium-low heat. Add the washed and dried urad dal to the pan.
4. Continuously stir and roast the urad dal on low medium heat until it turns golden brown and emits a nutty aroma. This might take around 8-10 minutes. Ensure it doesn’t burn. Remove from heat and let it cool.
5. Once the roasted urad dal has cooled down, transfer it to a grinder or food processor. Grind it into a fine powder. Set aside.
6. Now grind gond into powder and keep aside.
7. Then put the same pan on low medium heat. Add grounded dal, besan, and ghee. Mix well and fry till it becomes golden in colour.
8. Now add powdered gond and fry until it puffs up.
9. Then add chopped nuts (almonds, cashews, pistachios), dry coconut powder, and cardamom powder. Mix well and roast for 2-3 minutes.
10. Switch off the flame and put the mixture aside.
11. Grate or break the jaggery into smaller chunks for easy melting. Now add this jaggery into a pan and add 3/4 cup water to it.
12. Melt the jaggery on low heat. Stir continuously until it reaches a syrup-like consistency.
13. Add this jaggery syrup to the roasted dal mixture in two times. Mix well and stir continuously till the mixture become thick and start leaving the pan.
14. Side by side grease a tray and sprinkle some chopped nuts. Now pour the mixture over it and spread evenly.
15. Allow it to cool and set for about 5-6 hours.
16. Once the mixture has cooled and set, use a knife to cut it into desired barfi-sized pieces or squares.
17. Your delicious urad dal barfi is ready to be served and enjoyed!
