How we can make these healthy carrot paneer ladoo

It is a simple and easy recipe even a beginner can make it perfectly. To make these carrot paneer ladoos, firstly we grate the carrot and cook them till all of their moisture is dried up and then cool it completely. After that, we add grated paneer, raw sugar, and roasted nut and make ladoos in the form of small balls, refrigerate them and then serve.

As we have used paneer in making of carrot paneer ladoo, which is a dairy product, it has a short shelf life. It stays good for 5-7 days when stored in an airtight container in the refrigerator.

Step by step preparation of low sugar dessert- caroot paneer ladoo

1.Wash and lightly peel the carrots. Then grate them with the help of a grater.Transfer the grated carrot into a big pan and put it on the low flame, start cooking. Stir occasionally, so they cook evenly and do not stick at the bottom.

2. Cook them till all the moisture of the carrots dried up. It will take around 18-20 minutes. Once the carrot is dried add 1 tbsp ghee, mix and cook for 1 more minute. Switch off the flame and let the carrots cool completely.

3. Now take a small pan, put it on the low flame, and heat ½ tsp ghee in it. Add almonds and lightly roast them for 1-2 minutes. Transfer them to a plate. Then again add ½ tsp ghee and sesame seeds and roast them for 30 seconds. Take off from the flame, transfer to a plate and add coconut powder in it, mix them well, and keep it aside.

4. When the cooked carrots cool down completely, add grated paneer, sugar, and roasted almonds. Mix them together gently. Now start making small ladoos out of it and roll each ladoo into the sesame and coconut mixture. Repeat the process till the mixture finish.

5. Keep the prepared ladoos in the refrigerator for at least half an hour before serving. They taste best when chilled. Leftover ladoos store in an airtight container and put in the refrigerator for later use.
