The best thing about this veg pasta recipe is that you can customize it according to your choice. I have used green pepper, yellow pepper, carrot, onion, and tomato. You can also add other vegetables like broccoli, frozen sweet corn, spinach, zucchinis. Also, you can try this with other pasta like macaroni, penne, spirals for this recipe.

This Indian style masala pasta recipe is eggless, vegan and kids friendly recipe.

How to make mixed veg fusilli pasta at home

Firstly , I have sauteed fresh mixed veggies for few minutes before adding them to the boiled fusilli pasta. You can also add steamed or boiled vegetables if you want but saute vegetables gives a nice crunch to the recipe.

To give the authentic Indian touch to this pasta recipe, I have used tomato puree and pasta sauce both. Tomato puree with spices and pasta sauce gives a little sweet, tangy and spicy flavor to this mixed veg fusilli pasta.

This veg fusilli pasta is a wholesome meal and perfect for Lunch or Dinner.

Step by step preparation of veg fusilli pasta with fresh basil leaves

1. Boil water in a saucepan, add salt to it. Add raw pasta and cook it for 8-10 minutes till it becomes soft and tender. Now, strain it with the help of a colander and add 1 tbsp oil mix well. Keep it aside.

2. Take a wide pan, add 1 tbsp oil, onion and saute them for 1-2 minutes till onion become translucent. Then add sliced carrots, green and yellow capsicum, and mix well. Cover it and cook for 2-3 minutes. Transfer them to a plate.

3. Add 2 tbsp oil in the same pan, jeera powder, salt, turmeric powder, dry oregano and mix well. Now, add tomato puree and cook till it starts leaving oil. Add pasta sauce, onion greens and mix.

4. Finally, add sauteed vegetables and boiled pasta, mix nicely so that gravy coats the pasta well, and cook it further for about 1-2 minutes on medium flame.

5. Switch off the flame and cover it, and leave it for 5 minutes so that flavors can infuse well with pasta.

6. Then transfer into a serving plate and garnish with some fresh basil and serve warm. Enjoy this healthy & colorful pasta at lunch or dinner time.

  • 225 gm fusilli pasta

  • 1 cup yellow capsicum (cut into long slices)
  • ¼ cup green onion stalk
  • 1 cup carrots (cut into long slices)

  • 1 tsp salt + 1/2 tsp
  • ½ tsp turmeric
  • ½ tsp jeera powder
  • ½ tsp oregano
  • 2 tbsp pasta sauce
  • Few leaves of fresh basil for garnishing
