What is Nachos

Nacho chips are from Mexican cuisine where they are called tortilla chips and served as a starter or appetizer with a spicy salsa or a cheese dip. Tortilla chips are made from corn tortillas cut into triangles or wedges and then deep-fried or alternatively can be baked. They are often served with a spicy dip or seasoned with herbs and spices. Tortillas are made from white corn, yellow corn, blue cornmeal, red corn with the addition of little whole wheat flour, oil, salt and black pepper.

These baked nachos are very easy to prepare at home, crisp, light in texture and delicious in taste. Nachos are mainly served with fresh salsa dip but you can also enjoy it with any of your favourite dips.

There is little difference between homemade and market bought corn chips. The texture is not similar as we are not using any chemicals or preservative. But once you adopt the taste of these homemade nachos you will love them to eat.

What is cornmeal

Cornmeal is also called maize flour. In India, we just get the yellow corn but in Mexico and Central America, this is found in a variety of other colours such as red, orange, blue, white, cream, pink, purple, brown and black. We can use corn in the making of tortilla, tortilla chips, tacos, cornmeal, corn flour, corn oil, etc. A miniature form of corn called baby corn is used in making pasta, pulao, appetizers, soups, salads, stir fry dishes.

Ingredients used in the making of Baked Corn Nachos chips

Cornmeal – Used yellow cornmeal, the star ingredient, has a coarse texture and gives a nutty taste to nachos.

Whole wheat flour – Cornmeal is gluten-free so, to give a nice binding to the dough wheat flour is used. To make it gluten-free can add lentil flour instead of wheat flour.

Refined oil – I have used sunflower oil you can also choose any other oil which does not have a strong smell. The oil enhances flavour and makes the chips crisp.

Powdered sugar – provides a mild sweetness to chips.

Salt and black pepper powder – provides flavour and improving taste.

Baking powder – helps in making chips light and crisp.

Health benefits of eating corn

  • Corn is high in carbs as well as fibre content, which helps in improving digestion. It is an energy-providing grain that also contains valuable B-complex vitamins, a decent amount of protein and therefore a great choice while making a meal plan for athletes
  • It also contains a good amount of antioxidants carotenoids, lutein and zeaxanthin, which promote eye health.
  • As it contains good amount of Vitamin B12, folic acid and iron which helps in the production of red blood cells in the body and reducing the risk of Anemia. It supplies enough nutrients required to produce fresh Red blood cells.

Step by step preparation of Baked Corn Nachos / Homemade Nachos chips / Yellow Corn Chips

1. Preheat oven at 180 degree Celsius with both the rods on for about 10-12 minutes.

2. Take a bowl, add cornmeal, wheat flour, sugar, salt, baking powder and black pepper powder. Mix nicely. Add oil and mix with flour mixture till it becomes like breadcrumbs consistency.

3.Now add water gradually and knead it into a tight dough. Divide the dough into three parts. Take one ball and roll it into a thin circle about 1/8 cm in thickness.

4. Now prick the circle with a fork. First, cut the extra uneven part and make a square shape and then divide it into 2-3 pieces. Finally, cut into triangles to give them an authentic nachos shape.

5. Gently, place them on a baking tray and bake them in a preheated oven for 12-15 minutes or until they become light brown in colour.

6. Take it out from the oven and let them cool completely. Store them in an airtight container at room temperature. Nachos stay good for weeks if left for so long.

Serving suggestions

Baked nacho chips are served as a appetizer or as a snack with fresh homemade salsa. They are a healthy finger foods for little kids.

Ingredients
  

  • 100 gm corn meal
  • 40 gm whole wheat flour
  • 35 ml refined oil
  • 1 tsp powdered sugar
  • ½ tsp salt
  • ¼ tsp black pepper powder
  • ¼ tsp baking powder
  • 60-70 ml hot water (water quantity depends on the quality of cornmeal)

Instructions
 

  • Method Preheat oven at 180 degree Celsius with both the rods on for about 10-12 minutes.

  • Mix them nicely. Add oil and mix with flour if we bind it forms a ball.
  • Now add water and knead it into a tight dough.

  • Now prick the circle with a fork. Cut it into a square shape and divide into 2-3 reactangles. Cut into triangle shape giving them an authentic nacho shape.
  • Place them on a baking tray and bake them in a preheated oven for 12-15 minutes or until they become light brown in colour.
  • Take out from the oven and let them cool completely. Store them in an air tight container at the room temperature. They stay good for weeks if left for so long.
