Kheer or payasam( popular in south India) is an Indian pudding made with rice and whole milk. Kheer can also be made in different variations like makhana kheer, paneer kheer, lauki ki kheer, pumpkin kheer, oats kheer, Samak rice kheer, dry fruits kheer, cauliflower kheer.
Usually, we make kheer or payasam in a big vessel and cook slowly on low flame for hours till it thickens. But this carrot rice kheer recipe is a quick recipe like Samak rice kheer that will be ready in 30 minutes and tastes similar to the long processed kheer.

Step by step preparation with pictures of carrot rice kheer
1. Rinse rice several times with water and put aside.Wash, peel and grate carrots and put aside.Now take a pressure cooker, put it on a low flame.Then add rinsed rice, grated carrot, and 3 cups of milk.
2. Close the lid of the pressure cooker and wait till two whistles are gone. Switch off the gas and wait for the pressure to release.
3. Now take a small frying pan, melt ½ tsp ghee and add chopped nuts. Lightly roasted them for 1-2 minutes.Wash 10-12 (around 2 tbsp) black currants (kishmish) and then soak them for 5-10 minutes.
4. Once the pressure is released, open the lid and mix it nicely.Then switch on the flame, add ½ cup milk and pre-soaked black currants and cook it for 2-3 minutes. Stir occasionally to avoid sticking at the bottom.
5. After that, add sugar and freshly grounded small cardamom and cook further 1-2 minutes. Now switch off the flame and let it cool down a little bit.
6.Then serve this healthy and delicious carrot rice kheer and enjoy. Don’t forget to decorate it with roasted nuts. It enhances the taste and flavor of the kheer.

Tips & Tricks
- If you have time, you can also soak the rice for ½ hour before making a kheer that helps in the fast cooking.
- While cooking stirs the kheer occasionally to avoid sticking at the bottom.
- You can also grind nuts and then add if making it for little kids to avoid choking.
- I have used skim milk to reduce the calories but, you can replace it with whole milk to make the kheer more rich and creamy.
- Rice is added to the kheer to make it creamy and thick. To make it for the fasting time, you can skip the rice and made it with carrot only or use Samak rice.
- As I have added white sugar to sweeten the kheer, it can be easily replaced with jaggery.

Carrot and rice kheer / Quick recipe with pressure cooker
Ingredients
- 200 gm carrot grated
- 70 gm rice
- 3 &1/2 cup skim milk 900 ml
- 50 gm white sugar
- 2-3 green cardamom freshly ground
- 2 tbsp black currants
- ½ tsp ghee
- 2-3 tbsp chopped nuts
Instructions

- Then add rinsed rice, grated carrot, and 3 cups of milk.
