Ingredients required
Paneer– used homemade low-fat paneer. We need soft paneer for this recipe. If your paneer looks hard, add 1-2 tbsp milk while we blend.
Fresh coconut– gives a soft moist texture to the burfi but if fresh coconut is not available, add dry coconut powder instead. In that case, add 2-3 tbsp milk to cook the coconut.
Sweetener– Jaggery is used here to sweeten the burfi. It imparts a nice chocolatey colour and a caramel flavour to the burfi as well as a healthy alternative to refined sugar.
Flavouring – addition of cardamom powder to enhance the flavour, and garnish with nuts gives an attractive look.

Step-by-step preparation of fresh coconut and paneer burfi with jaggery
1.First transfer paneer into a blender jar and blend for few seconds to make it smooth.
2. Transfer paneer paste to a pan and keep it aside.
3. Now in the same jar add chopped fresh coconut pieces and grind them to make a coarse paste. Put it aside.
4. Put the pan with paneer on a low flame and cook it for 2-3 minutes till the paneer dry up a little.
5. Add coconut paste and mix well. Cook again for 2-3 minutes till the mixture becomes thick and very less moisture is left. Switch off the flame.
6. Now in another a pan add crushed jaggery and 2-3 tbsp water. Cook it till the jaggery dissolves and thickens to form a single stand syrup. Switch off the flame.
7. Add the jaggery syrup to the paneer mixture, mix well. Put the pan on low medium flame and cook it till the mixture become thick and dry.
8. Immediately transfer the mixture to a greased tray and spread it evenly. Garnish with chopped nuts and pista. Let it cool for 2-3 hours and then cut into pieces.
Serving suggestion

Tips and tricks
- Paneer should be soft and not dry. If the paneer seems dry add 1 tbsp milk while blending.
- I have used fresh coconut but if fresh coconut is not available then dry coconut powder can be used. In that case add 2-3 tbsp milk to cook coconut.
- Cook the mixture after mixing jaggery syrup till it becomes completely dry.
- Cool the burfi for 2-3 hours before cutting.
- As we have used dairy product, store them in an airtight container and keep in the refrigerator. They stay good for 5-7 days when stored in the refrigerator.
