Ingredients required to make oats jaggery cake
Before we get started with the baking process, gather all the ingredients you’ll need:
Oats– I have used rolled oats here, grind them into a grinder jar to make their powder. You can also use quick oats instead.
Jaggery syrup– homemade dark jaggery syrup is used here which gives it a unique caramel colour and flavour also better than light colour syrup in nutrition.
Curd– provides moisturizer to the cake.
Refined oil– add softness and keep the cake moist even we stored it in the refrigerator.Use oil without any strong smell.
Besan– it provides a nutty taste and helps in binding.
Almonds– increase nutrition value and and gives crumbly texture to the cake.
Rising agent– helps to make the cake light and fluffy.
Sesame seeds and chopped nuts– for garnishing. Gives attractive look and crunchy taste. You can also add in the batter to add more crunch into the cake.

Step by step preparation of oats almonds jaggery cake
1.Preheat your oven to 180°C (350°F) and grease a cake tin with a bit of oil or butter. Line it with a parchment paper.
2. In a mixing bowl, whisk curd, oil and jaggery syrup until they form a smooth, homogeneous mixture. Add vanilla essence and mix everything well.
3. Now combine the oats powder, besan, almond powder, baking powder, baking soda, and salt. Mix them well to ensure an even distribution of ingredients.
4. Gently fold them together using a spatula until you have a consistent batter.
5. Depending on the thickness of the batter, add milk gradually to achieve a cake batter-like consistency. The amount of milk needed may vary, so add it slowly and stop when you reach the desired consistency.
6. Batter should be medium thick consistency.
7. Pour the batter in to the greased tin. Sprinkle some sesame seeds and chopped nuts. Tap 2-3 times so remove any air bubble if present.
8. Tap the cake tin 2-3 times to remove any air bubbles.
9. Bake the cake in the preheated oven for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean.
10. Cover the tin with a towel and allow the cake to cool in the tin for about 10 minutes before transferring it to a wire rack to cool completely. Once cooled, slice and serve!
