When you compare bread recipes with bread rolls, you will find that the making of dough is different otherwise ingredients are almost similar.
I love baking and like to prepare my bread and pavs at home. Homemade bread or rolls have a nice fresh flavour and more over healthier than market bought as we use fresh ingredients to make them.
These homemade garlic rolls are eggless and free from any kind of preservatives. As we have baked these with whole wheat flour their texture will be slightly denser than all-purpose flour. But the taste of freshly baked homemade garlic cheese rolls is divine.
To make these rolls, I used instant dry yeast. For making bread at home instant yeast is the best choice. But if someone knows how to bake with fresh yeast, result is incomparable.
I have used preferment method to make these garlic rolls as this adds softness to the bread.

Ingredients required to make cheesy mini garlic bread rolls
Whole wheat flour– to make the rolls health friendly whole wheat flour is used. You can also try with millets or mutigrain flour. But first start with plain flour and then goes with mixed flour.
Yeast– instant dry yeast is used. It does require any proofing before adding to the dry flour mixture. But I always prefer to activate yeast and then add to the mixture.
Butter– add soft melted butter to the dough while kneading. It improves flavour and add softness.
Cheese– used grated cheddar and mozerella cheese for adding into the rolls.
Sweet corn– it is optional if you want can add it or otherwise skip it. You can even add veggies of your choice to make them more nutritious.
Step by step preparation of mini garlic bread roll
Making preferment
1.In a bowl add 50 gm flour, 60 ml water and ¼ tsp yeast, mix nicely. Make a sticy dough , cover with cling film and leave aside for at least 1 hour.
Proofing yeast
2. Mix ¾ tsp yeast, 1tsp sugar and 60 ml lukewarm water in bowl. Leave it aside for 5-7 minutes.
Making of garlic mixture.
3. In a pan add 2 tbsp unsalted butter, add chopped garlic and ½ tsp salt. Cook it for 1-2 minutes. Switch off the flame and let it cool.
Making dough
4. In a bowl add 250 gm whole wheat flour, salt, preferment mixture, yeast mixture and mix. Add little water at a time and make a sticky dough. Cover it and put it aside for 10-15 minutes.
5. Now take off the dough on a clean kitchen counter, start kneading.
6. Knead if for 2-3 minutes and then add 2 tbsp soft butter and knead till it becomes soft and smooth.
7. Sprinkle some dry flour if needed in between. Knead the dough for 6-7minutes till it becomes smooth.
8. Grease the bowl with little oil. Place the dough. Cover it and leave aside till it becomes double in size. This depend upon weather conditions.
9. Once the dough becomes double in size , punch it down . Knead for few seconds, Divide the dough into 2 pieces. Take a piece and roll it into a rectangle.
10. Cut it into 6 equal pieces. Take a piece add 1-2 tbsp filling and fold it length wise to give a shape of roll. Do same with the rest of the pieces.
11. Meanwhile preheat oven at 180 degrees celsius with both the rods and fan on.
12. Sprinkle little dry flour on a baking tray and place them on it.
13. Bake them in a preheated oven for 20-22 minutes or till they become golden in colour.
14. Once done, take out from the oven. Apply little butter on the top and serve warm with homemade tomato ketchup.
Serving suggestions
Enjoy these pull apart mini garlic cheese buns at dinner time with soup. You can also serve them with sauce at evening snack time with a hot cup of tea.
Tips and Tricks
- I will recommend to activate your yeast before adding to the dry mixture.
- Give a warm environment to rise the dough.
- Preheat oven at least 10-15 minutes before the baking of rolls.
- Serve them warm for best taste. If they become cold due to any reason microwave them for seconds before serving.
- You can also add some veggies if you like, chop them into fine before adding to the stuffing.
