About Scones

Scones are believed to be originated from Scotland and known as Scottish quick bread. They are usually round or wedge in shape and cooked on a griddle or baked in an oven. Scones are mild in sweetness and light and soft in texture. They are served cold with either cream, butter or jam with a cup of hot tea. In the United States, they are called scone biscuits.

Scone are usually made of wheat flour or oatmeal with baking powder as a leavening agent and baked in the oven on a baking sheet.

About orange almond scone biscuits

These scone biscuits are not a true kind of scones. They are in between quick bread and regular biscuits, or we can say they are a type of soft and flaky biscuits. They taste delicious and serve with tea or milk as a snack or for breakfast.

The original scones dough is a little wet kind but, here I used less liquid to give them the texture of biscuits. Their texture is soft and flaky but not crunchy or crisp.

Ingredients used for scone biscuits

Whole wheat flour – rich in fibre and essential nutrients. It is a healthy choice for making scone biscuits. Oats can also be used for making scones but, I had not tried with them yet. If you want, you can try and share your outcomes with us.

Butter– I used unsalted homemade low-fat chilled butter to make these biscuits. You can use full-fat butter instead but, the calories go rise. It provides a nice aromatic flavour, flakiness and rise to the biscuits.

baking powder – is used to get the rise in the biscuit.

Jaggery powder– I have used jaggery powder as it is healthier than white sugar. You can also try with other healthier versions of sugar like coconut sugar, palm sugar or brown sugar.

Milk– low-fat milk is used for making scones. You can use full-fat milk or fresh cream to get a more rich flavour.

 Orange zest– it gives a citrusy flavour to the scone biscuits. You can also replace it with vanilla, almond, or another flavour of your choice.

Almonds flakes – give a crunch in each bite and increase the nutrition value of the scones.

For how long we can store scones?

Traditional scones are like quick bread so, they are only good for a day or two. But these scones are low in moisture so, you can keep them for about 4-5 days at room temperature in an airtight container.

Is scone sweet?

Scones are either sweet or savoury in taste. Even sweet scones are not highly sweetened. They are just mild in sweetness.

Step by step preparation of orange almond scone biscuits

1. In a mixing bowl, add whole wheat flour, jaggery powder, Baking powder, milk powder and salt. Mix them nicely.

2. Now add cold butter and rub gently with the flour mixture. Till it becomes a breadcrumb-like consistency. Then add almond flakes and orange zest, mix it. 

3. Add milk gradually to the mixture to make a crumbly dough. Don’t add more milk. 

4. Meanwhile, preheat the oven at 200 degrees Celsius for 10-12 minutes.

5. Now, divide the dough into two parts. Roll each part into a 3-4 inch circle. Place one circle over the other and roll them into a big circle with 1/2 inch thickness.

6. Cut it into the desired shape with the help of a cookie cutter. Place the biscuits on a baking tray lined with parchment paper.

7. Apply some milk on the biscuits and sprinkle little brown sugar on them. Bake them at 200 degrees Celsius for about 13-15 minutes.

8. Take it out from the oven and let them cool completely.

9. Serve with a hot cup of tea or milk. Store leftover scones in an airtight container at room temperature. They stay best for up to 4-5 days at room temperature.

Serving suggestions

Apply little jam, cream cheese or chocolate spread on orange almond scone biscuits and serve them with a cup of hot tea or coffee at evening snack time. They are healthy snacks for kids too.

Tips and tricks

  1. The dough of traditional scones are on a wetter side but, these scone biscuits dough should be on the drier side.
  2. Do not knead the scone dough just combine. Otherwise, gluten will develop and, they do not become light and flaky.
  3. Butter should be very cold before adding to the mixture.
  4. I have used jaggery powder that can be replaced with other sugar types like brown sugar, white sugar, khandsari sugar or coconut sugar.
