Bajra also known as pearl millet is traditionally eaten during winters at our home. Add a dollop of butter and a piece of jaggery with bajra roti gives an amazing taste and ultimate satisfaction to our soul.

Making of this panjiri recipe is very easy and quick. Even a beginner can make this. The process just needs roasting of flour and dry fruits and finally mixing of them.

We usually make a big batch of panjiri or ladoos that will be consumed throughout winter as a quick snack or dessert.

Generally, while making panjiri we ground all nuts and seeds before adding them to the roasted flour. But here, I didn’t grind them and keep them as it is. I like the crunchy taste of the whole nuts and seeds. The choice is yours if you like to grind, go ahead.

It is such a healthy and delicious mixture of roasted bajra flour, alsi, nuts, seeds and jaggery syrup. Traditionally, we add either boora or khandsari as a sweetener. Or also we can use powdered jaggery. But I added jaggery syrup to increase the warmth in the recipe.

Ingredients required to make flaxseeds and bajra panjiri or panjeeri

Flour– Bajra flour is used as the base of this panjiri recipe. It gives warmth in the winter so, a great ingredient to add in this recipe. You can also add other flour of your choice or add multigrain flour to make this panjiri.

Flaxseeds or alsi– as one of the star ingredient, gives a nutty taste and increase healthy fats content in the recipe.

Makhana– add crispiness and crunch to the panjiri. It is rich in fibre helps in improving digestion and prevents constipation. Also, makhana is a great anti-ageing food.

Edible gum or gond– is also one of the key ingredients in this recipe. It provides a warm effect on our body so consumed mainly during winter time.

Coconut flakes and almonds– also provide crunch and healthy fatty acids content.

Jaggery– Gives a nice caramel flavour to panjiri. It is rich in minerals, also gives warmth, and is a healthy alternative to refined sugar.

Ghee– helps to add flavour and moistness. Here, I used desi cow ghee, which has Anti-inflammatory and Anti-cancer properties. Helps to maintain a healthy gut and strong immune system.

Health benefits of Bajra and alsi

  • Bajra is from the millet family and it is a gluten-free grain. Also known as pearl millet. It is very rich in protein, fibre, Vitamin B6, Iron, Zinc, and Folate.
  • It helps in improving blood circulation in our body and thus increases heat production in our body. 
  • Due to its iron and folic acid contents, it is a healthy choice of food for pregnant women and nursing mothers 
  • Bajra contains a good amount of protein and fibre and is helpful in the growth period of little and young kids.
  • Alsi or flaxseeds are a rich source of essential fatty acids(omega-3) as well as Vitamins and Minerals. 
  • Alsi and bajra both are digested slowly so, a good option for diabetic patients.
  • Bajra is considered a healthy choice of food for pregnant women and nursing mothers due to its iron and folic acid contents. But due to the anti-nutrition and cyanogenic glycosides present in Alsi, it is not advisable to consume by pregnant and lactating mothers.
  • In Ayurveda, Alsi is also used to cure various skin diseases.

Step by step preparation of bajra and flaxseeds panjiri

1.First, lightly roast flaxseeds for 2-3 minutes on low flame and let them cool. Transfer to a grinder jar and grind into powder form. Keep it aside.

2. Now heat 1 tbsp ghee in the same pan. Add gond and fry it till it becomes fluffy and crispy. Add watermelon seeds and roast for few seconds. Now transfer them to a bowl.

3. Again, heat 1 tbsp ghee in the pan. Add makhana and roast them till they become crispy. Transfer to the bowl.

4. After that, heat 1 tsp ghee and roast almond slices for 1-2 minutes on low flame. Add coconut flakes and roast them for few seconds. Transfer them to the same bowl..

5. Finally, heat rest of the ghee and add bajra flour to it. Roast it for around 7-8 minutes till its raw smell is gone. Switch off the flame and let it cool slightly.

6. Then in another pan add crushed jaggery. Also add ¼ cup water and cook till the jaggery melts and form a syrup. We don’t need to make any threads in the syrup. Switch off the flame. Cool it slightly.

 7. Now add all the roasted nuts to the bajra flour and jaggery syrup, mix well. After that, add flaxseeds powder and mix well altogether.

8. Let it cool completely and then store in an air tight container. It stays good for about 3-4 weeks at room temperature.

Serving suggestions

It can be served as an after school snack or even as breakfast . Serve this with a cup of hot golden milk, almond milk.  Just 3-4 tablespoons of this panjiri  with milk is very filling and a satisfying meal.

Tips and tricks

  1. Roast bajra flour and all the dry fruits and nuts on a low flame otherwise they may burn and ruin the taste of panjiri.
  2. Slightly cool Alsi before grinding into powder otherwise it capture moisture and become soggy.
  3.  You can add any other nuts and seeds of your choice.
  4. If bajra is not suitable for you replace it with wheat flour, multigrain flour or any other gluten free flour.
  5. Store it an air tight container to keep it for longer time.

Ingredients
  

  • 250 gm 2 cup bajra flour
  • ½ cup ghee
  • 50 gm gond
  • 50 gm makhana
  • 50 gm almonds
  • 50 gm dry coconut flakes
  • 25 gm watermelon seeds
  • 200 gm jaggery powder
  • ¼ cup water
  • 100 gm flaxseeds

Instructions
