These buns are a healthier option as made with wheat flour and delicious in taste. Whole wheat flour imparts a nutty flavour to these buns. We can use these whole wheat buns for making a veggie burger or sandwiches.

What is a burger bun?

The bun is a round-shaped bread with a dome top and flat bottom. Usually, it is sliced into two halves and filled with a veg or non-veg patty, salad leaves, cheese and some sauces. Burger buns are commonly known as Hamburger buns because they are commonly filled with a Hamburger patty and it is a very popular fast food item.

About whole wheat and semolina burger buns

These healthy buns are made with a combination of whole wheat flour and semolina. The recipe of these burger buns is similar to other bread recipes. Instead of giving the shape of a loaf, we divide the dough into several equal parts and shape them into buns.They are perfect for veggie burger, sandwiches or simply as a plain dinner rolls.  Ingredients used in making of Wheat flour and semolina bun

  • Whole wheat flour – it adds a nice nutty flavour to these buns. Wheat flour is rich in nutrients and fibre that makes the buns wholesome and nutritious in taste. I always use regular chapatti atta for making bread and buns.
  • Semolina – as this recipe is not 100% whole wheat, I have added about 2/3 of whole wheat flour and 1/3 of fine semolina. Semolina helps in providing a light texture to these burger buns.
  • Milk powder – addition of milk powder helps in giving a soft texture and sweet taste also imparts a nice colour to the buns.
  • Buttermilk – It helps in giving a soft texture and tender crumb to the buns. You can use milk or water instead of buttermilk.
  • Yeast – Instant dried yeast is used in this recipe. It can be directly added to the flour mixture without proofing. But, I always prefer to prove it first to make sure of its activity level. You can also replace it with fresh yeast or active dry yeast but the texture will be different. If you use active dry yeast it is important to proof first before adding to the flour.

Here, I am sharing with you a burger bun made with whole wheat and semolina and filled with soya granules patties that make it a wholesome and healthy burger recipe. 

Step by step preparation of Wheat flour and semolina bun

1.In a bowl, mix sugar, ½ cup lukewarm water and dry instant yeast. Put it aside for about five to seven minutes or until the mixture becomes frothy. That will ensure that the yeast is alive and working well.

2. Now, add both whole wheat and semolina in a big mixing bowl. Then add salt, sugar, milk powder, and mix. Add the yeast mixture, buttermilk, make a soft and sticky dough. Use water if needed. Keep it aside for 10-15 minutes.

3.After 10-15 minutes, add melted butter and mix.

4.Transfer the dough to the kitchen counter. Knead the dough until it becomes less sticky and smooth. It will take around 10-12 minutes. 

5.Place the dough in a greased bowl, cover it and place it in a warm place until it becomes double in volume. It might take 40-50 minutes or more depends upon the weather conditions.

6.Once the dough becomes double in size, punch it down and knead it for few seconds.

7. Divide the dough into seven equal pieces and make a smooth round of each. Place them on a greased baking tray and cover them with a kitchen towel. Leave it aside for second proofing that will take around 30-40 minutes.

8.Meanwhile, preheat the oven at 180 degrees Celsius with both the rods on for about 10-15 minutes.

9.After second proofing, apply some milk on the buns and sprinkle sesame seeds.

10.Bake the burger buns for 20-25 minutes. Take them out, apply little butter on them and transfer them to a cooling rack. Let them cool completely.

11. Make a veggie burger from these burger buns.

Serving suggestion

Make a veggie burger by filling a vegetable patty inside or eat them like sandwiches by applying some cheese or spread. This soya granules tikki burger is a complete meal to serve at lunch or dinner. Also, a great appetizer to serve on special occasions.

Tips and tricks

  1. Kneading is the key to a loaf of softer bread. So, knead the dough till it becomes smooth and less sticky. It will take 10-12 minutes by hand or 7-8 minutes using a stand mixer.
  2. Use soft and fine whole wheat flour for making bread. It gives a soft texture and nice crumb to the bread.
  3. Keep an eye on proofing time. Longer or lesser proofing will change the texture and taste of the bread.
  4. Cool the buns completely before slicing.

For proofing yeast

For making dough

  • 250 gm whole wheat flour
  • 100 gm fine semolina
  • ½ tsp salt
  • 1 tsp sugar
  • 1 tbsp milk powder
  • 150 ml butter milk
  • 20-30 ml water
  • 3 tbsp unsalted melted butter
  • 1 tbsp white til for garnishing
  • 1 tbsp milk for brushing
  • ½ tbsp butter for applying after baking
  • ½ tsp Oil for greasing
