This 5 minutes quick dry coconut peanut chutney is a midly spiced, flavourful, and delicious condiment that is mostly paired with snacks like idli, dosa, vada, uttapam. It also goes well with chillas, kebabs, tikkis, and cutlets.
In a grinder jar, add small pieces of dry coconut, whole red chili, dry roasted peanuts, salt, and jeera powder.
Add a little water and grind it. Then add the rest of the water and grind it again till it changes into a coarse paste like consistency.
Transfer it into a bowl.
For preparing tadka, heat oil in a small pan. Add heeng, small mustard seeds(rai), and a few curry leave. Saute them for few seconds and then switch off the flame.
Add this hot tadka to the chutney.

Notes
1. Dry coconut can be replaced with fresh coconut.2. We can add curd instead of water that gives it a more creamy flavor and texture.3. Keep the consistency a bit coarse that gives it a crunchy texture.4. If you do not have peanuts in hand then roasted chana or chana dal can be used.5. Tadka should be skipped if you do not like it but I highly recommend it as it enhances the flavor and gives a very nice aroma to the chutney.
