Made with mango pulp, chia seeds and curd, it is a creamy and delicious gluten-free dessert recipe that can be enjoyed at breakfast time, as a mid-day snack or as an after-meal dessert.
Take a bowl add curd, whisk it to make it smooth. Now add chia seeds, mix well. Cover the bowl and refrigerate it for 1-2 hours.
Make a smooth puree of mango pulp. Transfer it to a bowl and keep it aside. Chop nuts and put them aside.
Take out the curd and chia seeds mixture from the refrigerator. Chia seeds absorb the water from the curd and swell.
Now take the serving glass, first pour 2 tbsp of curd and chia seeds mixture then 2 tbsp of mango puree. Again curd mixture and then finally mango layer.
Top with some coconut powder. Then garnish with some nuts and dried cranberry and serve immediately.ENJOY!

1. Chia seeds contain digestive inhibitors so it is essential to soak them in liquid first before using them for any recipes.2. For 1 cup of liquid we usually add 3-4 tbsp of chia seeds. We can keep soaked chia seeds for up to 4-5 days in the refrigerator.3. Dairy milk, coconut milk, almond milk, cashew milk, curd or even plain water can be used for soaking chia seeds according to the requirement of the recipe.
