Personal Pizza With Paneer And Corn / Overnight Pizza Dough Recipe

Homemade Personal pizza with overnight dough crust is similar to Pizza hut's pan pizza. But nutrition-wise, it is healthier. The dough of the pizza base is made with whole wheat flour and kept overnight which adds more flavour to it.
200gmcheesea blend of mozzarella and cheddar cheese
1medium sized green peppercut into long slices
1medium sized onioncut into slices
½cupsweet corn
100gmhomemade low fat paneercubed in small pieces
3tbsppizza sauce
2tbsptomato sauce
1tbsporegano
½tspred chilli flakes or powder
½tspblack pepper
Instructions
Making of dough
In a bowl, add instant dry yeast, sugar and ¼ cup lukewarm water, mix. Cover it and leave it for 10 minutes.
Now in a big mixing bowl, add flour, semolina, salt and the rest of the sugar. Add yeast mixture and water gradually to make a soft and sticky dough.
Leave it for 15 minutes. After that, take out the dough on a clean surface and knead it for about 5 minutes. Then add room temperature butter, mix and knead again for 7-8 minutes till the dough become smooth and non-sticky.
Grease the bowl with oil. Place the dough in it and wrap it with plastic wrap. Put the bowl in the refrigerator overnight.
The next day, take this bowl out at least 2 hours before you start making pizza.
Let it sit on the kitchen counter and risen the dough.
Then punch down the dough and knead for few seconds.
Meanwhile, preheat the oven at 200 degrees celsius for at least 12-15 minutes with both the rods on.
Divide the dough into four pieces, make a smooth round of them. Take one ball and roll it into a 6-inch circle and place it on a greased pan. Do the same with other balls.
Baking of personal pan pizza
Now, bake these in the oven at 200 degrees celsius for 2-3 minutes.
Take them out from the oven and let them cool a little bit.
In a bowl, mix pizza sauce and tomato sauce and put aside.
Now spread this sauce mixture on the cooled pizza base and then top with mozzarella, onion, green capsicum, paneer and sweet corn.
Sprinkle red chilli powder, black pepper powder, and oregano.
Bake them @ 200 degrees for about 15-20 minutes until the crust becomes crisp and the cheese becomes brown from the sides.
Take them out and let them cool for about 5 minutes.
Then cut into the desired shape and serve warm.
Notes
After taking out the dough from the refrigerator, give it enough time for proofing and reach to room temperature.
You can also pre bake the pizza bases and store them in the freezer for up to months or refrigerate them for 3-4 days.
The oven should be very hot before placing the pizza tray inside.
You can add any topping of your choice and customize it according to your taste.
