What is Manchurian 

Manchurian is a famous Indo-Chinese appetizer made with fried crisp vegetable balls dipped in a mixture of sweet and sour sauces. The taste of this veg manchurian is so delicious and addictive. we can serve them dry as in snacks or with gravy as a side dish with fried rice, jeera rice, or noodles.

It is a great option for parties menu, get-togethers, family dinners or any special occasion. This vegetable manchurian is the favourite of kids. 

 About Mix Vegetable Manchurian Recipe

In this post, I am sharing with you a gluten-free Mix Vegetable Manchurian Recipe . In this recipe, I have used cabbage, onion, capsicum, green beans mixed with cornflour, rice flour and besan and some spices. Make small size balls out of it. Then these balls are deep-fried until they become crisp and then dipped in the sauce mixture. 

 While making vegetable manchurian you should keep some tips in your mind. Wash vegetables and drain them properly before starting the process. Chop them very fine so that they can bind easily while making balls. Deep fry them in hot oil. In this way, they absorb less oil. I adopted the double frying method. This helps in the fast frying of vegetable balls and make them very crisp. After making balls from the dough don’t leave them for a longer time. Start frying as soon as the balls are ready. Lastly, add the vegetable Manchurian balls to the sauce just before serving.

Step by step preparation of Vegetable Manchurian With Gravy

1. First, finely chop cabbage, onion, capsicum and beans. Then grate the carrot and put them aside.

2. In a mixing bowl, add shredded vegetables, garlic, ginger and green chilli paste, salt, cornflour, rice flour and mix well. After that add besan and mix again.

3. Make small lemon size balls out of this mixture. I got 30 balls from this much mixture.

4. Meanwhile, heat oil in a pan on the medium high flame. Once the oil is heated, add few balls at a time. Do not touch them for about 1 minute, then flip them and let them cook. Take them out before they fried fully. Do the same with the rest of the balls.

5. Now, heat the oil to the high flame setting. Then add few balls and let them fry till they become crisp. Remove them from the oil. Repeat with the rest of the balls. Once done keep them aside.

6. Then heat 1 tbsp oil in a saucepan, add minced garlic and finely chopped green chillies. Saute them for a minute. Add chopped onion and green capsicum, mix. Cover the pan and let them cook for about 1-2 minutes.

7. Meanwhile, in a bowl add red chilli sauce, soya sauce, tomato ketchup, and vinegar. Mix them nicely and keep them aside.

8. In another bowl take 1 tbsp of cornflour, add 2 tbsp water and mix. Put it aside.

9. Now add the sauce mixture and about 1 and ½ cups of water in the saucepan. Also, add black pepper powder and salt to it. Let them cook till it start boiling.

10. Add cornflour mixture to it and stir continuously till the gravy become a little thick. It just takes around 1 minute. 

11. Finally, add fried veg Manchurian balls to the gravy, gently mix it with the gravy so it coats well on the Manchurian balls. Switch off the flame.

12. Serve Manchurian immediately with jeera rice, fried rice or noodles.

Serving suggestion

Enjoy dry Manchurian in the evening time with green chutney or raw mango chutney. Gravy Manchurian is best served with jeera rice, fried rice or noodles at lunch or dinner time.

Tips and tricks

  1. Wash and dry the vegetables before chopping otherwise, the water makes the mixture thin and we have to add a lot of cornflour and maida to it.
  2. If you feel vegetables have a lot of water after chopping. Squeeze them first then add other ingredients to it.
  3. Adopt a double frying method to lower the oil absorption by Manchurian balls.
  4. You can also shallow fry them in the appam pan but the taste might be affected.

Ingredients
  

For gravy balls

  • 3 cup cabbage finely chopped
  • ¼ cup onion finely chopped
  • 1 cup carrot grated
  • ½ cup capsicum / Shimla mirch – finely chopped
  • ½ cup beans finely chopped
  • 1 tbsp garlic ginger and green chilli paste
  • 3 tbsp corn flour / Corn starch
  • 3 tbsp rice flour
  • 3 tbsp besan
  • 1 tsp salt or as per your taste
  • Oil for frying

Ingredients for the Dry & Gravy Manchurian

  • 1 tbsp Soya Sauce
  • 1 tsp red Chilli Sauce
  • ½ tbsp Vinegar
  • 2 tbsp Tomato Sauce
  • 1 tbsp Corn Flour
  • 1 tbsp Oil
  • ½ tsp Salt
  • ¼ tsp Black pepper powder
