To make these chocolate dates, we first need to melt the chocolate. Use the microwave or double boiler to melt the chocolate. I prefer to use the microwave as it is simple and quick. Transfer the chocolate into a microwave-safe bowl and heat on a high setting for 20 seconds and mix, repeat the process till the chocolate melts. After that, keep the chocolate aside till it becomes at room temperature.
Ingredients required Chocolate covered peanut butter stuffed dates
Dark Chocolate(70%) – I have used Morde brand dark chocolate with 70% cocoa. But if you like, can use either milk or white chocolate according to your taste buds.
Soft Medjool dates– Medjool dates are perfect for making this dessert. Choose medium or large size dates. If these are not available, can use other varieties of dates too.
Peanut butter– Use either homemade or market bought peanut butter which is easily accessible for you.
Toppings– Top them with your favourite toppings like colourful sprinkles or roll them into coconut powder or chopped nuts to make them more attractive.

Step by step preparation of Chocolate covered peanut butter stuffed dates
1. Chop the chocolate into fine pieces so it melts easily. Transfer it into a microwave-safe bowl and heat on a high setting for 20 seconds, stir it. Repeat the process till the chocolate melts completely.
2. Stir the melted chocolate nicely for a few seconds till it becomes smooth and shiny. Keep aside to let it cool to room temperature.
3. Now, make a cut and remove the seeds of dates. Repeat with all the dates.
4. Take some peanut butter in a bowl. Now, pick a date and fill it with peanut butter with the help of a small spoon. You can also transfer peanut butter into a piping bag and fill the dates. Repeat the process till all the dates are filled.
5. Arrange them on a plate.
6. Now, stir the chocolate once nicely. Take a date filled with peanut butter and dip it into the chocolate. Drip extra chocolate and place this on a wire rack. Repeat the process till all is done.
7. Top them with sprinkles or any other topping of your choice.
8. You can do the same with pecans and almonds.
9. Place the tray in the refrigerator for about 30 minutes to set the chocolate.
10. Serve immediately or store them in an airtight container in the fridge for up to a week.
