It is a popular Mexican one-dish meal recipe from Tex-Mex cuisine. The original Mexican burrito is a cornmeal tortilla wrap filled with cooked rice, beans, roasted veggies and varieties of sauces like sour cream, ranch, guacamole, salsa, chilli sauce etc according to the person’s choice.
Whereas Mexican Burrito bowl is a wholesome meal recipe without flour tortilla wrap made from a layer of white or brown rice, red kidney beans, sour cream, and fresh salsa topped with corn chips and cheese. It is also called the Naked burrito bowl as it has no wrap.

Here, I am sharing with you My version of a chipotle style veggies burrito bowl which is very easy to assemble and customized according to your taste and with the ingredients in hand.
Mexican meal was the first choice to order when I was in the USA. Because the taste and spiciness of Mexican food are most similar to Indian taste. It has all the things of a perfect meal required carbs, protein, fat and fibre.
To make a veggies burrito bowl I, used cooked brown rice, home-cooked red kidney beans, saute mix vegetables, freshly made hung curd dip with green chutney, lettuce leaves and a few spices to give it a mild spicy taste. You are free to increase or decrease the spices mixture according to your taste.

Cook the brown rice well, it takes a long time to cook. I used a pressure cooker to cook them faster. Also used home cooked red beans or rajma instead of canned beans. Freshly boiled beans are more healthy and tasty.
Burrito bowl is a kid’s friendly recipe and even kids can serve it themselves. It is also a wholesome meal option for a packed lunch of kids as well as office goers. It tastes good both warm as well as cold. Serve it with a glass of mint lassi or homemade watermelon mint juice instead of a carbonated drink. You can also topped it with some cheese and baked nacho chip.

Step by step preparation of mexican rice burrito bowl
1.First wash and soak red beans for 8-10 hours or best overnight.
2. After soaking, wash it once and transfer to a pressure cooker. Add 2.5 times water then the amount of beans. Then add salt and turmeric powder. Cook it on low medium flame for about 15-20 minutes till it well cooked. Once done put it aside till required.
3. Wash rice and transfer to a pressure cooker, add water double the amount of rice.
4. Close the lid and put it on medium flame. Cook it for up to 8 whistles.
5. Once the pressure is released, open the led and check if rice is well cooked. Put them aside till needed.
6. Cut lettuce, onion, tomato, shimla mirch, and carrots. Keep them aside.
7. Now, take a frying pan, heat oil. Add chopped onion, shimla mirch, carrots and sweet corn. Then add salt, and black pepper powder. Saute them for 2-3 minutes on medium flame.
8. Then add boiled red beans and brown rice, mix well and cook for 1 minute.
9. Meanwhile, add 2 tbsp green chutney in hung curd and mix nicely till it becomes a smooth mixture.
10. Now transfer the rice mixture in a big serving bowl, sprinkle chopped lettuce, tomatoes and hung curd dip. Serve immediately.
Serving suggestions
Best serve Naked Burrito Bowl for a lunch or dinner, followed by a dessert of oats apple crumble.
Tips and tricks
- You can cook rice and beans beforehand and store them in the refrigerator. They stay good in the refrigerator for 2-3 days.
- Make fresh hung curd dip and saute veggies for the best taste.
- Serve them warm or chilled according to your preference. It tastes good both warm as well as cold.
- You can assemble it in a layered form or just mix it together as like pulao.

- 1 cup 120 gm Red bean

- 3 small sized tomatoes finely chopped

- ½ cup green shimla mirch
- ½ cup carrots
- 1 tsp salt
- ¼ tsp black pepper
- 1 cup lettuce leaves finely chopped
