To make this salad there is no need for any cooking and very easy to prepare at home. This puffed amaranth veg salad will be ready in under 10 minutes and goes well with your regular meal, buffet, kitty parties or any special occasions. It does not contain any grain therefore, a good option for fasting time to keep you hydrated and nourished.

Ingredients used in the making of amaranth salad
Puffed amaranth seeds – I used homemade puffed rajgira seeds. You can check my video how to puff amaranth seeds if you want to puff at home. But, now a days, puffed seeds are easily available in the market. You can buy from there too.
Raw veggies– I used Carrot, cucumber, kakdi and tomato. you can add other vegetables like broccoli, yellow pumpkin, zucchini, etc. according your taste. If it is not for fasting can add raw onion too.
Peanuts– I have used dry roasted peanut and crush them before adding into the salad. They gives a crunchy texture to the salad.
Rock salt(Sendha namak) – provides savoury taste and can be used if you are preparaing it for fasting purpose.
Roasted cumin seeds powder – Good for digestion also improves taste.
Chat masala – Gives a tangy flavour to the salad.
Black pepper powder – Giving a hot spicy flavour and taste.
Coconut oil – Provides nice flavour and richness in the salad.
Lemon juice – Improves tastes and good for digestion
Green coriander leaves for garnishing – make it more attractive and increase the antioxidant value in the salad.

Step by step preparation of Popped Amaranth Seeds Salad
1. Peel and cut the cucumber into small pieces. Also cut kakdi, carrot, and tomato into small pieces.
2. Transfer them into a bowl.
3. Now in a wide bowl add puffed amaranth seeds, rock salt, roasted cumin seeds powder, chat masala, black pepper powder, and roasted and crushed peanuts. Mix them.
4. Add the chopped veggies, coconut oil, lemon juice, and chopped coriander leaves. Mix nicely.
5. Serve immediately.

Ingredients
- 50 gm Puffed amaranth seeds
- 1 Medium sized kakdi
- 1 medium sized cucumber
- 1 medium sized carrot
- 2 small size tomatoes
- 2 tbsp roasted and crushed peanuts
- ½ tsp sendha namak rock salt
- ½ tsp chat masala
- ¼ tsp black pepper powder
- 1 tbsp chopped green coriander leaves
- 1 tbsp lemon juice
- 1 tbsp virgin coconut oil
Instructions
