What is makhana
Makhana is used in Indian cooking since ancient time. It is also known as phool makhana, foxnuts or lotus seeds and considered to be a superfood. It looks like popped popcorn and can be eaten raw, roasted or cooked. Raw Makhana is a little chewy in texture, to make them crisp do dry roasting or with adding little ghee.
Ingredients required for caramelized makhana or Gur makhana
Phool makhana -the main ingredient and star ingredient of the recipe.
Gur or Jaggery – provides sweetness and crunchiness, a good option to replace unrefined white sugar.
Coconut oil – gives a nice aroma and flavour
Sesame seeds or white til seeds – rich in calcium and gives a nutty taste. makhana. You can also give a unique flavour by adding cardamom or cinnamon or coconut powder.
How to store jaggery caramelized lotus seeds
We can make this recipe in large quantities. After cooking let them cool completely and then put in a clean airtight container and store at a dry and cool place. they stay best up to 2-3 weeks at room temperature.

Step by step preparation of caramelized makhana recipe
- First , take a pan, put it on a low flame. Add raw makhana and roast them for 5-6 minutes till they become crisp. Transfer them to a bowl.
2. Now heat 1 tsp coconut oil in the same pan , add pieces of jaggery opr gur. Melt it, add ½ tbsp spoon water and wait till it melts.
3. Then add til seeds and roasted makhana. Mix it nicely so that jaggery and til seeds coat every piece of makhana. Cook for 30 seconds.
4. Switch off the flame, transfer them to a plate. Let them cool completely.
5. Once they cool down separate them and store in an air tight container.They stay good for 10-15 days if stored properly.
Serving suggestions
Til gur makhana or caramelized makhana is served best as a snack with a glass of milk or a hot cup of tea. it is good option for snacking during fasting period.

Tips and tricks
- You can also add cardamom powder or cinnamon powder or coconut to give it a unique flavour.
- I have used coconut oil to make it vegan but replace with ghee if you want
- Jaggery melts very fast and start burning so keep an eye on the pan while cooking
- Brown sugar is also substituted if you do not have jaggery in hand.
- Makhana seems soft after cooked but they become crunchy once they cool down.
