This honey and caramelized almonds ice cream is a protein rich, egg free, gluten-free and dairy-free recipe where we used non-dairy whipping cream instead of full-fat cream and thick almond milk instead of dairy milk for the ice cream base.

It is an egg less melt in mouth ice cream recipe with a soft texture and crunchy bites due to the addition of healthy almond praline made with jaggery.

This dairy free honey and caramelized almond ice cream is the perfect nut-based ice cream for a person who loves nuts and wants it without milk. The making of this ice cream is quick and easy. We don’t need to cook or churn the ice cream. Also, there is no need for an ice cream maker.

Also, remove the ice cream from the freezer and put it at the kitchen counter for 5-10 minutes before serving to get the perfect texture. Garnish with some roasted almond pieces or caramelized almond powder to get the more crunch.

I made a almond praline with jaggery to add in the ice cream, you can also dry roast almonds and break them into small pieces to add in the ice cream instead praline. Toasting or roasting of almonds increases their nutty flavour. It is a soft, smooth, creamy ice cream without any ice crystals.

Ingredients used in making of dairy-free honey almond ice cream

Whipping cream– used non-dairy whipping cream for the ice cream base. This cream is easy to whip as compared to heavy full fat cream and is also, low in fat content.  If you do not want it dairy-free can use heavy cream for a richer texture.

Almonds– thick almond milk with soaked almonds is used to give a nice almond taste and texture to the ice cream.

Almond praline– used jaggery based healthy almond praline for this recipe to make it healthy sugar-free ice cream.

Essence– two essence- ice cream essence and almond essence is added to give the ice cream a strong flavour. But it is totally optional you can skip it if you don’t have them handy.Vanilla essence  can also be used in place of them.

Sweetener – honey is used as a sweetener in small quantities to give the ice cream a mild sweetness. You can also use other healthy sweeteners like maple syrup, jaggery syrup, date syrup, monk sugar, etc.

Cornflour – for providing thickness to the base of the ice cream.

Almonds are a good source of Vitamin E, B2(riboflavin), magnesium, and potassium which are good for lowering bad cholesterol and help in the proper flow of the nutrients through blood in our body. They contain fat but it is a good monounsaturated fat that keeps our heart healthy. Almonds are also good for bone health. Honey is also a healthier option over refined white sugar and has a lots of health benefits.

Maple syrup, jaggery syrup, monk sugar or date syrup can be added as a healthy sweetener.

Step by step preparation of caramelized almond and honey ice cream

 How to make jaggery praline

1.Put a frying pan on low heat. Add crushed jaggery, stir it till it strats melting. Now add 1 tbsp water and cook till it melts completely and become thick and frothy. Then add whole almonds and mix well.

2. Immediately transfer this mixture to a greased plate. Let it cool completely. Once cooled down then crush it in a pestle motor to make a coarse powder. For details you can check this video and post of making almond praline with jaggery.

How to make almond paste for the ice cream base

1. First soak 50 gm almonds overnight. Remove the skin. Transfer to a grinder jar, add 3-4 tbsp water and grind for few seconds. Then add rest of the water and grind it to a smooth paste. Keep it aside till needed.

How to prepare the base for ice cream

1.In a big mixing bowl take 225 ml of non dairy whipping cream. Cream should be defrosted and in liquid form.

2.Now with the help of a hand beater whisk the cream till it starts thicken. Add almond paste, cornflour, ice cream essence, almond essence and whisk till it becomes in soft peak stage.

3.At this moment add honey and mix till it get the stiff peaks.

4.Add more than half of the almond praline and mix.

5.Transfer to a freezer safe box or a aluminium tin. Spread it evenly. Sprinkle some almond praline. Cover it with a cling film and put it in the refrigerator for 10-12 hours.

6.Remove the tin and serve in the bowl. Garnish with some almond praline and honey.ENJOY!

  • After transferring to the box always cover the ice cream with a wrapper or cling film to avoid any air contact while setting it in the freezer. Air exposure makes the ice crystals in the ice cream and ruins its texture.

  • Don’t store ice cream for a longer time as it results in an icy texture and loses flavour.
