It is a vegan, gluten-free, grain-free mildly sweet recipe. This dhaniya panjiri is very easy to prepare at home and ready within 15 minutes. The steps are similar as we make regular panjiri with wheat flour, only the exception is that we do not use any flour to make this dish. It mainly offers with panchamrit during the fast. Every year, across India and abroad, Hindus celebrate one of their most significant festivals – Janmashtami. It is the celebration of the birth of Lord Krishna, the eighth avatar of Lord Vishnu. This festival is also known as Krishnashtami or Gokulashtami. On this auspicious day, people keep fast and worship Lord Krishna. Ingredients used for making Dhaniya Dry Fruit Panjiri

Coriander seeds powder(dhaniya powder) – It is the main ingredient. I have used homemade roasted coriander seeds powder. Market bought coriander powder is very fine that ruined the overall texture of this dish.

Coconut flakes – Dried unsweetened coconut flakes are added. if you want you can add desiccated coconut powder.

Coconut oil – Ghee is used traditionally to make this recipe, I have added coconut oil to make it vegan but you can use ghee if you want. Overall coconut oil does not change the taste much.

Gond (Herbal gum)– After puffing up gond become light and crispy and give a crunchy taste while eating.

Dry fruits – I have used almonds, cashews, watermelon seeds and pista. You can also add other dry fruits like walnuts, pine nuts, makhana, raisins, sunflower seeds or pumpkin seeds according to your taste.

Jaggery powder– Jaggery is used to make it more healthy and rich in minerals. It provides sweetness to the panjiri.

Tips and tricks

  1. Roast all the ingredients on low-medium heat to avoid burning.
  2. Use homemade dhaniya powder as the market bought is very fine and not gives a good taste.
  3. For making dhaniya powder at home, dry roast coriander seeds for 4-5 minutes and then grind them coarsely in a grinder. Homemade dhaniya powder has a unique fresh aroma that enhances the taste.
  4. Add jaggery powder to the dhaniya mixture only when it cools down completely otherwise, the jaggery will melt with heat and the taste of the panjiri is ruined. You can also increase or decrease the quantity. Other sugar alternatives like coconut sugar, mishri, brown sugar etc can also be added according to your convenience.
