Who doesn’t like cookies? And after that, if the cookies are healthy and delicious no one going to leave a single cookie. I always try to bake my batch of cookies without eggs at home to enjoy with my tea.

So this time around, I thought of a fusion recipe to mix my simple whole wheat jaggery cookie recipe with thandai to make thandai flavoured cookies. The result came out so delicious and flavourful. This fusion recipe of healthy eggless cookies goes well with a cup of hot tea or a glass of milk. Not only adults, but kids also enjoy the same.

For Indian festivals, I always try to create healthy and delicious recipes that are not only easy to make at home but also look and taste good. In previous years on Holi festival, I shared Gulkand Gujiya and Thandai Mawa Cake with wheat flour. And here are the simple and tasty cookies made with thandai masala powder that is also made at home only.

Thandai as you know is the famous drink to serve during the Holi festival. The spice combination of thandai gives you a cooling effect and strength to your body during the weather change. You can prepare your own thandai powder at home. Making thandai powder at home give you the liberty of adding spice quantity according to your taste. You can skip, increase or decrease the quantity of any ingredients as per your taste.

These cookies are low in sugar and fat. I got around 21 cookies of around 16 gram each. Each cookies has approximately 4 gm of fat and 3.5 gm of sugar. Thandai flavoured these spiced cookies are addictive and guilt free snack.

  • Cashews
  • Pistachio
  • Melon seeds
  • Poppy seeds
  • Fennel seeds
  • Whole Black pepper
  • Whole green cardamom
  • Pinch of Saffron stands
  • Dry rose petels

Eggless Thandai Cookies Ingredients

  • Unsalted butter
  • Jaggery powder
  • Whole wheat flour
  • Thandai powder
  • Custard powder
  • Milk powder
  • Baking powder
  • Baking soda
  • Salt
  • Cold Milk as required

How to Make Eggless Thandai Cookies at Home

1. Prepare the Thandai Masala Powder:

Add almonds, cashews, pistachio, melon seeds,poppy seeds, peppercorn, small cardamom, saffron in a grinder jar and grind it into a corase powder. Now transfer to a plate and add dry rose petals and mix well.

Take out 1/3 cup of thandai powder and put it aside. Your homemade Thandai masala powder is ready.

2. Prepare the Thandai Cookies:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. In a mixing bowl, cream butter until it becomes fluffy. Then add jaggery powder and beat again together till the mixture becomes light and fluffy.

Add whole wheat flour, thandai powder, custard powder, milk powder, baking powder, nbaking soda and salt. Mix lightly with spatula or use your hands. Be careful not to overmix.

Make a soft dough. Place the dough in the refrigerator for at least 30-40 minutes.

After that, make small balls of dough with the help of a measuring spoon. In this way you will get equal size cookies.

Flatten each cookie slightly with your palm and place on the cookie sheet with a gap og 2 inch apart.

Bake in the preheated oven for 18-20 minutes or until the edges of the cookies start turning golden brown.

Remove from the oven and let the cookies cool on the baking sheet for a few seconds before transferring them to a wire rack to cool completely.

3. Garnish Thandai Cookies with Chocolate

Once cooled, You can decorate cookies with melted dark chocolate and nuts, keep them them plain as per your choice.

Store these Thandai flavoured cookies in an airtight container.

Serving Suggestions

Thandai cookies without eggs are the perfect combination for your evening snack/beverage. Serve these buttery crisp cookies with a twist of Thandai to your guests or can be used for gifting purposes during festival time.

Ingredients
  

For Thandai Masala Powder:

  • 2 cup almonds
  • 2 cup cashews
  • 2 tbsp pistachio
  • 1 tablespoon melon seeds
  • 1 tablespoon poppy seeds
  • 1 tablespoon fennel seeds
  • 1 teaspoon whole black peppercorns
  • 4-5 small cardamom
  • ¼ teaspoon saffron strands
  • 2 tbsp rose petals dried

For Thandai Cookies:

  • 1 cup 130 gm whole wheat flour
  • 80 gm unsalted butter softened
  • 70 gm powdered sugar
  • cup Thandai masala powder
  • ½ teaspoon baking powder
  • A pinch of baking soda
  • A pinch of salt
  • For Garnishing of cookies
  • 50 gm melted dark chocolate optional
  • Sliced pista for garnish optional

Instructions
