Bel sharbat is a sweet and slightly sour taste summer drink recipe. It is an easy and quick recipe and tastes delicious. This sharbat is preferably served during summer time to beat the summer heat.
What is Bel/Bael Fruit?
Bel/Bael is also known as Stone apple or Wood apple in English and bilva or sriphal or shivadruma in the Sanskrit language. It has also a sacred place in India as it is known as the tree of Lord Shiva and its leaves are used for the worship of Shivling.
After getting ripe it becomes a big size fruit with yellow to orange coloured skin. Its skin is very hard and we cannot cut it with a knife and should use a hard object like stone and a hammer to break it. The pulp inside is soft somewhat sweet in taste.
Bel is an important medicinal plant and is widely used in making traditional Ayurvedic medicines. Not only fruit but all parts root, leaf, trunk, and seeds of the bael or wood apple are beneficial in some or other way. We can also use this fruit in making jam, chutney, squash, ice cream, smoothie etc.
About the Recipe of Bel Sharbat
Bel sharbat is a traditional sharbat recipe in the North Indian Household during summers. It is a summer cooler drink enjoyed mainly on hot summer days to get rid of hot flashes.
Here, I am sharing the recipe of making bael or bel sharbat concentrate and how to make sharbat from that concentrate. For this, we need a ripe bael fruit pulp that is first mashed and strained then cooked with jaggery till it becomes thick.
We can store this concentrate in the refrigerator for 1-2 months and make sharbat when needed. I have used jaggery as a sweetener in making of bael sharbat to make it more healthy drink. To make it diabetic friendly skip jaggery and add sugar free or stevia drops just before serving.

How to Make Bel Sharbat at Home-Step by Step Preparation
1.First break the outer coverving and remove the pulp in a big bowl. Add 1 and half cup water in it and let it soak for 1-2 hours.
2.Then mash the pulp with the help of a spoon or a potato masher. Strain the pulp. One more time add little water in the leftover strained pulp and mash. Strain it.
3.Now add saunf powder, cardamom powder, black pepper powder, and jaggery in the pulp and put the sauce pan on a low flame. Cook till the a boil comes then add 1 pinch citric acid or tatric acid and mix. Cook it till the second boil comes. Switch off the flame and let the mixture cool completely.
4. Now transfer it to a clean and dry glass bottle and refrigerate it. It will stay good for 1-2 months.
5. Add 2-3 tbsp of prepared syrup in a glass with some ice cubes. Add chilled water, mix and serve. ENJOY!
