Strawberry is one of my favourite fruit and I like to use them in making smoothies, ice cream, cakes, cheesecakes, jam, scones, etc. So, I usually buy some freah strawberries at the end of their season and store them in the freezer to get them available when they are not in season.

What kind of strawberries are perfect for preserving?

Choose well-ripe firm strawberries with bright red colour and smooth texture without any bruises. They should not be over ripen otherwise, they become mushy after the freezing and defrosting process. 

For how long we can store or preserve fresh strawberries?

Strawberries can be stored for 7-10 days in the refrigerator, whereas they can be stored for several months to years in the freezer if you follow the proper way of storage.

What is the best form to store strawberry- whole or sliced?

You can preserve them in both ways – as whole or sliced – depending on how you wish to use the frozen strawberries later. If you wish to use them for preparing shakes, smoothies or ice creams, the whole strawberries are good to go. If they are to be used in making crisps, cakes or oatmeal, it’s best to store them as sliced form.

What kind of containers should we use for freezing strawberries?

You can use either freezer-safe glass or plastic containers or ziploc bags. I prefer to use ziploc bags as they consume less space and are economical and easy to use. For a longer freezer life, you can also use vacuum sealing bags.

Do frozen strawberries lose their nutrients?

The good thing is that the nutrients present in fruits don’t change significantly after freezing. There is a minimum loss between fresh and frozen fruits nutrients if we freeze them quickly after being picked. The important point here is that we should not preserve fruits with added sugar.

How to Store Strawberries-Step by Step Guide

1.First, slice the green leaf and any hard white part from strawberries.

2. Wash strawberries with fresh water to remove any dirt. Now, spread them on a paper towel or plate to let them dry.

3. Once dried, keep them whole, slice or chop into smaller pieces(this step is optional).

4. Now transfer them to a tray or plate and spread them into a single layer. Put the tray in the freezer for 2-3 hours.

5. Once they become frozen, take out the tray from the freezer and transfer whole strawberries in one bag and sliced ones into a separate ziploc bag. Squeeze out air as much as you can from ziploc bags and zip them.

6. Put the Ziploc bags with strawberries in the freezer.

7. When required, remove the amount of strawberries needed and thaw them. Put the rest back in the freezer.

Serving Suggestions

Use frozen strawberries for making jam, ice cream, puddings, cheesecakes, smoothies etc., is a good option when fresh strawberries are not available.

  2. Choose only firm and smooth textured strawberries to get a good taste and texture after defrosting. Over ripen strawberries becomes very soft and mushy.
