Roasted vegetables give a very nice crunch and flavour to the pasta. And and the secret is that we can add any vegetables of our choice or in hand and kids did not even know that it made with vegetables and they easily gulp them without any fuss.
You can also use an oven to roast vegetables but that is a little more time consuming than pan roasting. A smooth, delicious roasted vegetable sauce is ready in minutes. We can top this macaroni pasta with some sweet corn and homemade low-fat paneer which makes it a healthier recipe perfect for any mealtime either lunch, dinner or a quick brunch. It is also a good option for a party starter menu or packed tiffin.
Main ingredients used in the making of this healthy and delicious pasta
Macaroni pasta is comfort food and ready in around 30-40 minutes. There are many ways to give it variation and customize it according to your taste.
Main ingredients used in the making of macaroni pasta
Macaroni pasta – This pasta cooks very fast like other pasta penne, fusilli etc. It has a softer texture than other pasta.
Green veggies – I added carrots, green capsicum, onion, tomato – to make the pasta healthy and fibre rich. You can add other veggies of your choice.
Sweet corn and paneer – they are low in carbs and rich in protein. Make the pasta wholesome in nutrition as well as taste.
Refined oil – used for roasting vegetables and cook the sauce. It enhances the flavour of the recipe and makes pasta a little crispier in taste.
Pasta sauce – Gives a nice colour and flavour to macaroni pasta.
Spices – to make it flavourful and provides an authentic Indian taste.
Fresh mint leaves and dry oregano – for seasoning and garnishing make the pasta more aromatic and flavourful.
Step by step preparation of pan roasted vegetable sauce macaroni pasta
1.Wash and roughly cut vegetables and put them aside.
2. Now take a frying pan. Heat 1 tbsp oil in it, add onions. Sauté them 1-2 minutes. Then add chopped tomatoes, mix them. Cover the pan and cook it for 2-3 minutes.
3. Now add green chillies, carrot, capsicum, mix them. Cover the pan and cook till they become soft. This process will take 4-5 minutes. Off the flame and let them cool a little bit.
4. In another pan, boil water, add salt and ½ tbsp oil. Once it starts boiling, add macaroni pasta, mix nicely and cook it for just 5-6 minutes. Otherwise, they become very soft and sticky.
5. Check if the macaroni is cooked, strain water and run cold water over it to avoid sticking. Put it aside.
6. Once the roasted veggies cool down, transfer them into a mixer grinder and add little water and grind into a paste.
7. Now add 1 tbsp oil in the pan, ground vegetable sauce cook it on a slow flame for 1-2 minutes. Then, add salt, turmeric powder and pasta sauce, mix them. Cover the pan and cook it till it starts leaving oil.
8. Once the vegetable sauce is cooked, add boiled macaroni and mix well so that the sauce coats the macaroni well.
9. Cook it for 1-2 minutes so that the flavours infused well with macaroni. Switch off the flame.
10. Transfer to a serving bowl, top with sweet corn, paneer and garnish with fresh mint leaves and dry oregano. If fresh mint is not available, you can replace them with fresh basil leaves. Serve warm and enjoy!

Tips and tricks
1. I have added carrots, onion, tomato and capsicum, but you can choose other veggies of your choice like broccoli, beans, coloured bell pepper, zucchini.
2. Vegetables can be roasted in an oven or you can grill them if you want.
3. Seasoning and topping also can be customized according to your taste.
4. If you are a cheese lover, add grated cheese on warm macaroni just before serving that’s makes it more creamy in taste.

Easy Pan-roasted Vegetable Sauce Macaroni Pasta Recipe
Ingredients
- 225 gm Macaroni pasta
- 1 medium sized onion roughly chopped
- 1 medium sized carrot roughly chopped
- 1 green capsicum roughly chopped
- 2 medium sized tomato
- ¼ cup paneer cubes
- ¼ cup boiled sweet corn
- 2 tbsp pasta sauce
- 2 green chilli
- 2.5 tbsp refined oil
- ½ tsp turmeric
- 1 tsp salt
- 2 tsp Dry oregano
- Few fresh mint leaves
Instructions
