Begin by finely chopping the dark chocolate and transferring it to a bowl.
I am melting chocolate with double boiling method. You can either use double boiling or microwave to melt chocolate.
For this, boil water in a saucepan and place the bowl containing the chocolate on top. Make sure the flame is set to low to avoid burning of the chocolate. This method provides gentle, indirect heat, allowing the chocolate to melt evenly.
Stir continuously as the chocolate begins to melt. Once it starts to melt, add the coconut oil and continue mixing until the chocolate becomes shiny and smooth, free from any lumps.
Now add almond flour and jaggery powder into the melted chocolate. Also, add half of the chopped almonds, cashews, pistachios, and watermelon seeds. Stir well to combine all the ingredients.
Turn off the heat and mix everything thoroughly for 1-2 minutes, allowing the chocolate mixture to thicken and come together.
Line a tin with parchment paper, and sprinkle some of the chopped nuts at the bottom. This will add a delightful crunch to the fudge.
Now pour the prepared chocolate mixture evenly into the lined tin. Use a spatula to spread it out, ensuring a uniform thickness. Decorate the top with the remaining chopped nuts for added texture and flavor.
Allow the fudge to cool for 2-3 hours, or until it sets. Placing it in the refrigerator can help speed up the process.
Once the chocolate fudge has fully set, carefully lift it out of the tin using the parchment paper and cut it into your desired shapes. The fudge is now ready to enjoy!
