Amaranth Seeds & Dark Chocolate Energy Bar | Instant Rajgira Snack is a healthy, sugar-free bar recipe for a quick snacking. It is loaded with various essential nutrients from rajgira seeds, dry fruits and dark chocolate.
Take a saucepan and boil water in it. Once the water starts boiling, put the bowl with chocolate on the saucepan. The bowl should be bigger than the saucepan so that the steam does not escape from the sides.
Gently start mixing the chocolate till it melts completely.
Now, add coconut oil and jaggery powder and mix till they are well combined.
Add chopped nuts, chia seeds, vanilla essence and mix well.
Take off the bowl from the heat and add popped rajgira seeds. Mix well till all is well combined.
Transfer to a square tin lined with parchment paper. Spread it evenly, sprinkle some til seeds over it and let it cool completely for 1-2 hours.
After it cools down, cut into the desired shape and enjoy these protein-rich, gluten-free, dairy-free, vegan energy bars.
Store them in an airtight container and they stay good for 2-3 weeks at room temperature in the cold weather otherwise put them in the refrigerator.

1. To melt chocolate, use either the microwave or double boiler.2. Completely cool the rajgira seeds before adding them into the chocolate mixture if you popped them at home.3. If jaggery is not in hand can use honey, maple syrup or brown sugar as a sweetener.4. Finely chop nuts before adding.
