Notes
1. Choose good quality whole wheat flour (atta) that is finely ground. This will help ensure a smoother texture in your cookies.
2. Addition of curd provide moisture to the cookies. If you want them vegan can add mashed bananas, unsweetened applesauce, or dairy free yogurt. These ingredients not only add moisture but also contribute to the texture and flavor of the cookies.
3. Dough should be soft and sticky otherwise cookies become hard and dry. You can add little milk or curd if required.
4. Refrigeration of dough makes the cookies crisp and spread evenly while baking.
5. Adjust the baking time and temperature as needed. Whole wheat flour can cause cookies to brown faster, so it's best to lower the oven temperature slightly and keep a close eye on the cookies while they bake.
