First, grind almonds, walnuts, coconut, dry rose leaves and dates in a grinder mixer to make a coarse sticky mixture.
Grease tart mould with melted butter.
Now add 2-3 tbsp dry fruit mixture in the tart mould and press it with the help of a spoon to give a shape of the tart shell.
Place all the tart in a tray, cover with plastic wrap and freeze them for about 30 minutes to set.
How to make paneer filling and final assembling
Blend paneer, fresh cream and honey together till they form a creamy and smooth mixture.
transfer this mixture to a bowl, add chopped fresh fruits in it and put aside.
ow take out tarts base from the freezer, loosen the sides of the tart shell with a help of a knife and remove them from the mould.
Fill these tarts shell with paneer and fresh fruit filling, spread them evenly. Drip little honey and garnish with few dry rose petals.
Serve immediately or chill them in the refrigerator for half an hour and then enjoy.

1. Do not grind the dry fruit mixture for tarts shell to a very fine, keep it a little coarse form that gives a crunchy texture to the tart base.2. After making dry fruit tart base put them in the freezer to set.3. Add fruits in the paneer mixture just before serving otherwise they will leave the water and make the mixture runny.4. I have added grapes and pomegranate but you can use other fruits of your choice.
