Easy Carrot Laddu | Gajar ke Laddu | Healthy Dessert for Kids

Carrot laddu or gajar ke laddu is a Calcium and Protein rich healthy dessert for kids. This gajar ki mithai is very soft and delicious just melt in mouth Indian sweet recipe. This carrot paneer ladoo recipe is a low sugar dessert recipe made with-carrots, low fat homemade paneer, coconut powder, and khandsari sugar.

Instructions
Wash and lightly peel the carrots. Then grate them with the help of a grater.
Transfer the grated carrot into a big pan and put it on the low flame, start cooking.
Stir occasionally, so they cook evenly and do not stick at the bottom.
Cook them till all the moisture of the carrots dried up. It will take around 18-20 minutes.
Once the carrot is dried add 1 tbsp ghee, mix and cook for 1 more minute. Switch off the flame and let the carrots cool completely.
Now take a small pan, put it on the low flame, and heat ½ tsp ghee in it. Add almonds and lightly roast them for 1-2 minutes. Transfer them to a plate.
Then again add ½ tsp ghee and sesame seeds and roast them for 30 seconds. Take off from the flame, transfer to a plate and add coconut powder in it, mix them well, and keep it aside.
When the cooked carrots cool down completely, add grated paneer, sugar, and roasted almonds. Mix them together gently.
Now start making small ladoos out of it and roll each ladoo into the sesame and coconut mixture. Repeat the process till the mixture finish.
Keep the prepared ladoos in the refrigerator for at least half an hour before serving. They taste best when chilled. Leftover ladoos store in an airtight container and put in the refrigerator for later use.

1. Cook the carrots till no moisture left in them.2. Once the carrots are fully-cooked, cool them completely before adding other ingredients into them.3. Carrot paneer ladoos have a short shelf-life; always refrigerate them in an airtight container.4. Use dry and little hard paneer because even little moisture makes the ladoos soggy and alters the taste.5. Roasted almonds enhance the flavor and make them crunchier.
