Easy healthy lauki ke laddu recipe offers a unique and delightful twist on traditional Indian sweets. It is a low sugar dessert recipe perfect for a guilt free sweet dish option.
30gmdry coconut powder + 20 gm pista powder for coating
1-2drop green food colouroptional
Instructions
First peel lauki and remove the inner soft part with seeds. Now with the help of a greater grate it.
Heat a pan on medium heat. Add 1 tsp ghee and the grated lauki and cook for 3-4 minutes until it becomes slightly soft. Then cover it and cook further for 8-10 minutes. Don’t forget to stir inbetween.
After 10-12 minutes when the lauki becomes slightly and releases water, add desi khand and mix it well.
After adding khand the mixture becomes little liquidy.
Now cook the mixture further tills there is no moisture left. Add 1-2 drops of green food colour and mix well. It is totally optional. Now switch off the flame and let it cool completely.
Once the lauki mixture is cooled, combine grated paneer, dry coconut powder. Mix well until all the ingredients are thoroughly combined.
Now makes small lemon size balls and give them ladoo shape.
Roll it into dry coconut powder and pista powder dry mixture and keep aside in a plate. Make all the ladoos in the same manner.
Delicious and healthy lauki paneer and coconut ladoos are ready to serve.
For best taste refrigerate them for an hour before serving.
Keep the left over ladoos in the fridge only. They stay good for 5-7 days when stored properly in an air tight container in the refrigerator.

Notes
1. Sometime lauki is not mature enough and its contains lot of water content. In that case lightly squeeze out the grated lauki before start cooking. This will prevent the ladoos from becoming too watery.2. You can also dry roast the shredded coconut on low heat until it turns light golden brown. This will enhance the flavor and aroma of the coconut, giving a rich taste to the ladoos.3. I suggest to grate paneer not to blend as grated paneer gives a nice texture to the ladoos.4. Cook the mixture completely before adding paneer and coconut. 5. Keep laddu in the refrigerator for the best taste and to enjoy them for longer.
