1.Begin by soaking the black raisins, yellow raisins, dates, tutti-frutti, and cherries in freshly squeezed orange juice. Allow them to marinate and absorb the flavors, creating a burst of fruity goodness for your cake. Let this mixture sit for at least 24 hours, letting the fruits plump up in the citrusy embrace.
Prepare the nuts by chopping almonds, cashews, and walnuts into small pieces. These will add a delightful crunch and nutty richness to your plum cake.
In a bowl, mix the oil and jaggery syrup. Add soaked fruit mixture, orange zest, and the chopped nuts and mix well.
Put a sieve, sift together whole wheat flour, milk powder, cornflour, baking powder, baking soda, salt, cinnamon powder, cardamom powder, nutmeg powder, and ginger powder. This blend of spices will infuse your cake with those quintessential festive flavors.
Combine the dry and wet ingredients gently until they form a smooth batter ensuring an even distribution of flavors throughout the batter.
6.Put a cooker on low flame, spread some salt and put a stand. Now close the lid and preheat for 10 minutes. Remove whistle from it.
Grease a cake tin and line it with a parchment paper.
Pour in the prepared batter. Tap the tin gently to remove any air bubbles. Slide it into the cooker carefully and let the aromas fill your kitchen as the cake bakes to golden perfection.

1. I have used only wheat flour. If you want a lighter texture cake can add half maida and half wheat flour. To make it gluten free can use oats or rice flour.2. The batter of the cake should be thick.3. You can add any dry fruits and nuts of your choice.4. The cake can be refrigerated and stays good upto 10-12 days in the fridge.5. Every oven or gas has a different baking time, so keep an eye after 40 minutes of baking.
