Eggless Oats Coconut Cookies (No Flour, No Refined Sugar)

These eggless oats coconut cookies are refined sugar-free cookies made with quick oats, dry coconut powder, khandsari sugar and homemade fresh unsalted butter. They are soft and light cookies without any flour and just melt in mouth.
Preheat oven at 170 Degrees Celsius for 13-15 minutes.
First, ground quick oats into powder and keep aside. Add 2 tbsp milk into coconut powder, mix and keep it aside.
In a bowl add soft butter and beat it for 1-2 minutes. Now add khand sugar and beat them till sugar melts and the mixture becomes light and fluffy.
Add vanilla essence and mix well for few seconds. Then add baking powder and baking soda and mix well with the mixture for few seconds.
Now add oats powder, coconut mixture, custard powder and mix with spatula to for a soft & sticky dough.

Store them in an air tight container. They stays good for up to 10-15 days

Notes
1. All the ingredients should be at the room temperature.2. I have use khandsari sugar as a sweetner. You can also try with palm sugar, coconut sugar or even with sugar free if baking for a diabetic person.3. Refrigerate the dough for at least half an hour gives a nice even spreading of the cookies.4. Always preheat oven for 10-15 minutes before start baking.5. Cool the cookies completely before storing.
