Simple Spring onion veg curry/ Hare pyaz ki sabji is a easy and nutritious Indian style veg curry made with spring onion and potatoes in a tomato based gravy. It is a vegan, gluten-free, diabetic-friendly recipe. Serve warm with chapatti, paratha or rice with curd on the side.
Wash green onions. Separate green part and the white part. Cut into small pieces separately and put them aside.
Now in a pan heat oil, add cumin seeds and wait till they crackle.
Add chopped white part of onion and green chillies. Saute them for 2-3 minutes till the onion becomes slightly soft.
Now add tomato puree, coriander powder, turmeric powder, salt, garam masala and cook till it starts leaving oil.
Finally, add chopped potato and green part of the onion and sauté it for 1-2 minutes. Add 2 katori water and mix.
Cover the pressure cooker and cook up to 3 whistles on medium flame.
Once the pressure is released, transfer to a serving bowl and serve with chapatti or rice.

1. Choose fresh green onion having enough soft green part.2. While storing green onion separate their white and green part store them separate box or bag.3. If onion has a more green part and less white part. So do not add all the green part. Take one part of white onion and 1.5 part of greens.
