How to Make a Perfect Oreo Cheesecake at Home |No Gelatin Or Agar Agar is a creamy and mildly sweetened cheesecake recipe made with oreo biscuits, homemade cream cheese and non dairy whipping cream.
Boil milk in a sauce pan. Once boiled stir well and let it cool for 5-7 minutes.
Dissolve citric acid in warm water and keep aside. Now add this mixture to the boiled milk gradually with stirring continuously till the milk curdled and separate a light green colour liquid.
Now strain the solid from liquid and hang the solid part for about 30 minutes to drain off extra liquid.
After that take out the milk solid transfer to a mixer jar. Add 1 tbsp curd, 2 tbsp malai and 1/8 tsp salt and blend to form a smooth and creamy cream cheese. Transfer to a bowl refrigerate for about 1-2 hours.
For making of base
Take chilled cream in a bowl and start whipping it till it reaches to stiff peaks. Put it in the refrigerator till required.
Take a spring form pan, grease it with oil and put aside.
Now transfer digestive biscuits in the mixer jar and grind them then add sugar, cocoa powder and chilled butter and churn it again till they all mix well.
Transfer this mixture to the grease springfoam pan and spread evenly.
With little pressure make the to set . put it in the refrigerate for 10-15 minutes.
For making filling
Take around 100 gm of oreo biscuits, remove the cream and separate biscuits. Transfer biscuit part in a zip lock bag and crush them to make a coarse powder of it. Take out ½ part of it in a bowl and put aside. Then crush the rest of the biscuit into more fine powder and transfer to a bowl and put it aside.
Now in another bowl take oreo biscuits cream part, cream cheese, hung curd, condensed milk, corn flour and lemon juice and whisk till they blend together very well and becomes a smooth mixture.
Now mix cream cheese mixture with whipped cream gently and then add half of the crushed oreo biscuits part and mix well with the mixture. Filling for the cheese cake is ready.
Now take out the springform pan with base and pour this filling over it. Spread evenly with the help of a spatula. Then sprinkle powder of oreo biscuits on the top.
Wrap with a cling film anf put back in the refrigerator for about 7-8 hours.
Take out the pan, slowly remove the outer part of springform pan.
Cut the cake into pieces and serve chilled.
Notes
Use room temperature cream cheese, it is easier to whisk and well combine with other ingredients.
Always use chilled whipping cream and whip it up to stiff peaks. Gently fold cream cheese mixture and whipping cream without disturbing the air filled in whipped cream.
For topping you can add any fresh fruit, fruit compote, jam, lemon curd or fruit crush to decorate.
Use spring form pan to remove the cheesecake nicely.
Refrigerate it for at least 6-8 hours or best overnight. Do not freeze it.
