2cups(250 gm) of sweet corn kernels (boiled and cooled)
1large sized cucumberdiced
1medium sized onionchopped
2carrotsdiced
1.5tbsplemon juice
½cuppomegranate seeds
Few fresh basil & mint leavesoptional for added freshness
Instructions
First, remove the husks and silk, then cut the kernels off the cob. If using frozen corn, thaw it, and if using canned corn, drain and rinse it.
Now boil water in a pan and add corn kernals and cook them for 4-5 minutes on medium flame.
Then switch off the flame and strain water and let them cool completely. You can also store fresh corn. Check the video how to do this?
Prepare the Dressing
In a small bowl, whisk together the coconut oil, cumin seeds powder, chaat masala, black pepper powder, red chilli flakes, and salt until well combined.
In a large mixing bowl, combine the boiled and cooled corn kernels, diced cucumber, diced carrots, and chopped red onion. Pour the dressing and lemon juice.
Toss gently to mix everything evenly ensuring the dressing coats all the ingredients evenly
For an extra burst of freshness, sprinkle the pomegranate seeds, fresh basil and mint leaves on top of the salad and give it a final gentle toss.
