Indulge in the wholesome sweetness of this delicious lauki ka halwa(ghiya halwa) recipe. It is a simple Indian dessert made from bottle gourd, milk cream, jaggery, and a touch of cardamom. This comforting treat offers a perfect balance of flavors, combining tradition and nutrition in every spoonful.
Begin by peeling the lauki, removing the seeds, and grating it finely.
Sautéing the Lauki:
Sauté the grated lauki for 2-3 minutes until it starts releasing water.
Cover the pan and cook it for 5-7 minutes or until it becomes soft. Don’t forget to stir in between.
Sweeten the dish
After that, add jaggery and stir until it mixes well. The sweetness will balance the flavors and bring out the natural sweetness of the lauki.
Cook for 1-2 minutes till all the moisture absorbed.
Infusing Flavors:
Now add milk cream (Malai), cardamom powder, and dry coconut powder for a delightful aroma and rich color.
Mix well and cook until the mixture comes together and starts leaving the pan.
Switch off the flame and serve warm or chilled as per your choice.
Garnishing and Serving:

1. Choose Fresh and tender Lauki with no seeds inside for a best taste and texture of halwa.2. For a crunchy version you can use large shredder to grate lauki and for a smoother texture use fine one.3. Don’t squeeze out water of lauki as we are not adding milk to it and it needs some moisture for cooking.4. Cook on low medium flame gives you the best texture of lauki halwa. Stirring in between is very important to avoid any sticking at the bottom.5. Adjust the quantity of jaggery according your taste buds. You can also use other healthier options adding sweetness like coconut sugar, dates syrup, palm sugar or sugar free like stevia according to your requirement and choice.6. A small pinch of cardamom powder goes a long way in enhancing the flavor profile of your halwa.7. Coconut powder also adds flavour but if you want you can skip it.8. Add your favorite nuts, like almonds, cashews, or pistachios, and chop them finely for a satisfying crunch.9. Lauki halwa is best enjoyed warm, but if you like chilled you can refrigerate it and then serve.
