How to Make Paneer Stuffed Aloo Tikki Chaat at Home
Step 1: Prepare the Tikki Mixture
Mash boiled potatoes in a bowl. Add spices, salt, and binding agent, here I am using chana sattu and rice flour. Mix well to form a dough.
Step 2: Prepare Paneer Filling
In another bowl, mix crumbled paneer with salt, and all the spices mentioned in the ingredient list, and mix. Make small balls out of it and keep aside.
Step 3: Shape the Tikkis
Take a portion of potato mixture, flatten it, add paneer filling ball in the center, and seal it gently.
Step 4: Cook the Tikkis
Shallow fry the tikkis on an iron tawa until golden brown and crispy on both sides.
Step 5: Assemble the Chaat
Place hot tikkis on a plate. Add curd, red imli chutney, green coriander mint chutney, spices, and toppings like sev and pomegranate.

Tips for Perfect Tikki
Boil potatoes and cool completely. Best use cold potatoes for better binding
Do not overfill stuffing.
Cook on medium flame for crispiness.
Add oats powder for a healthier twist.
Use iron tawa or non-stick pan for less oil.
