Popped Amaranth Seeds Salad | Easy Protein Rich Salad With Millet is healthy, delicious and perfectly balanced in terms of nutrients, texture and flavour and serves as a meal itself.
1. Peel and cut the cucumber into small pieces. Also cut kakdi, carrot, and tomato into small pieces.
Transfer them into a bowl.
Now in a wide bowl add puffed amaranth seeds, rock salt, roasted cumin seeds powder, chat masala, black pepper powder, and roasted and crushed peanuts. Mix them.
Add the veggies, coconut oil, lemon juice, and chopped coriander leaves. Mix nicely.
Serve immediately.

1. To keep the freshness peel and chop veggies just before mixing.2. Once the mixing is done Serve immediately otherwise the salad becomes a little dry as amaranth seeds absorb the water released from the veggies.
