Instructions
Step 1 – Whip the Butter
Take 60 g room-temperature unsalted butter in a mixing bowl.
Whisk the butter until it becomes light and fluffy.
This step helps incorporate air into the butter and gives the cookies a better texture.
Step 2 – Add Desi Khand
Add 30 g desi khand and ¼ teaspoon vanilla.
Whisk everything together until the mixture becomes light and creamy.
Step 3 – Add the Dry Ingredients
Now add rajgira atta, almond powder, baking powder, baking soda, and pinch of salt
Mix everything gently.
Step 4 – Make the Dough
Use your hands to bring everything together and form a soft dough.
Avoid kneading the dough like roti dough. Simply combine the ingredients until there are no dry patches.
Step 5 – Refrigerate
Cover the dough and refrigerate for 20–25 minutes.
The dough will become slightly firm, making it easier to shape the cookies.
Step 6 – Shape the Cookies
Take small portions of the dough and roll them into balls.
For evenly sized cookies, you can use a measuring spoon or cookie scoop.
Place the balls on a baking sheet lined with parchment paper.
Gently flatten each ball.
Sprinkle almond flakes on top and lightly press them into the surface.
Step 7 – Bake
Preheat your oven to 180°C.
Bake the cookies for approximately 13–15 minutes.
The edges should become lightly golden.
Do not judge the final crispness immediately after removing them from the oven because the cookies will firm up as they cool.
Step 8 – Cool Completely
After baking, leave the cookies on the baking sheet for 1–2 minutes.
Then carefully transfer them to a wire rack.
Allow them to cool completely before storing or serving.
